My husband has been learning to roast his own coffee. I am thinking the coffee extract would make some amazing gifts using his coffee blend he has been experimenting with.
Apart from herbal extracts I usually mostly make my hazelnut extract, since I really love that in my coffee and over here in Sweden, you can't find the hazelnut flavored coffee beans or extract! Almond yes, hazelnut no... Hazelnut flavored coffee syrup yes but, I don't want all that sugar in my extracts... 😔 I crushed the hazelnuts and poured about 3/4 into a quart jar and filled up with vodka. Had it sitting for about 6 months before I started to be able to smell the hazelnut. Of course overpowered by the vodka but I felt I was on the right track! After about 6 months, I bought and added a few vanilla bean pods that I'd broken up to the hazelnut and vodka jar and that really made the flavor take off and not just the smell! 👍

I went to town making flavorings after one of your older videos. I use mostly vodka, but used spiced rum (per your tip) for vanilla and pineapple vanilla. I have a jar of peach flavoring, also with spiced rum, working now and can't wait to be able to use it. I always have a jar of vanilla working because I use it most. My last jar has been working over a year because I'm still working through the last batch. I don't add sweeteners to mine, because I use them in sweets anyway, and I let mine work for 6 months to a year before straining. It has been a lot of fun making the flavorings, and getting to use them. You have taught me so much!! Many Blessings!
I got some food grade glycerin in last months Azure order - have yet to try it. I'm looking forward to trying the chocolate nibs extract for my coffee. And I'm still jealous that you got all those vanilla beans at such a low cost. I knew I should have bought them back then, but I procrastinated! God bless!!
Heidi, we have made your vanilla extract with the spiced rum and love it. We also made your cough syrup using our own dehydrated oranges, honey, cinnamon, start anise in spiced rum. Let me tell you it works wonderfully! I have had a cough since I had one dose of the dreaded vaccine (I haven't had anymore. I have been diagnosed with HAE and am unable, thank God). That was a year ago and I tried everything to rid myself of the cough and congestion. Your remedy was the only thing that worked. I tried Thyme tea. Tumeric. I had things from my naturopath, but all that has worked was your remedy. Thank you!

I did almond in the original video but it was the only one that did not have the flavor I wanted. It was then I learned that almonds are not used to make almond extract because the flavor is not strong enough. Bitter almond or even apricot kernels are used instead because that flavor is much stronger in them

Hi! I have to say i did a recipe u reccomended years before. In december i felt fever which i think it might come from my kidneys or colon(some infection). I used bitter made from plants(Maria Treben recipe) and the one from u, 'grappa' with ginger, honney, oregano, garlic and turmeric. I am ok. I hope i do not have the infection anymore. Pain no more, fever no more, a good state of being. Also for my throat problems, i used Agrimonia Eupatoria tea, drank not cold, not very hot, just in between. This plant cures laringitis, faringitis, a lot of season problems. In maximum 3 days. Agrimonia Eupatoria. Thank you for all ur advises! ❤

It never occurred to me to use spiced rum. I have a batch in vodka right now, but will try spiced rum next time. I am wondering, do you split the vanilla beans before extracting or just use them whole? Also, I love to use Maple extract when I make granola-maple syrup just doesn’t have enough flavor in the small amount that is used in the recipe. Do you have any thoughts on how I can make it? I usually buy alcohol-free, but will use alcohol if need be.
When you dehydrate citrus with the peel on, do you find they become bitter? I dehydrated some lemons/limes/oranges from Misfits Market & was putting in a glass of water, but it was so bitter I had to add honey to make it palatable...and I'm trying to lower my carb intake, so I prefer just the fruit slices. I'm thinking next time I'll grate some zest off, then cut off as much pith as possible & dry just the pulp portion. That's a lot of extra work, but my research shows the pith contains a good amount of vitamin C, so I could dry & powder that separately, then encapsulate...but if there's a way to leave the slices intact & not have that bitter flavor, that would be my preference.
It is the lime peel that will do it as would grapefruit peel. This is why I do not use either of those peels any extracts or anything else. My orange and lemon extracts were made with the peels intact and they are not bitter at all.
🍀We made ekstrakt on Hawthorn and Appelcider vinegar, after a month on the counter a big flat thing have grown. Maybe a fungus type? What do you think? And I wonder if Ill have to throw it in wast???

thanks for another great video! question: i made some medicinal tincture using glycerin, and it was IMPOSSIBLE to strain!! what a terrible mess!! i was using a recipe, and using the glycerin full strength. do you have any advice?
Not sure what to say about straining, full strength glycerin really does not extract well and certainly does not strain well because of its viscosity, this is why it needs to be blended with water or some other low viscosity liquid

I made some mint extracts several years ago with either vodka or rum, and forgot about about them. They still have the mint in them. Would they still be usable? How would I tell if they’re safe?

Not really as I have had to change where I buy them many times over the years and I have not needed to buy any in a few years as I am very well stocked
I buy mine at Amazon. I buy the Madagascar grade B beans, and last time I bought the split beans and think that batch actually turned out better. Split beans are whole beans that just split during processing/curing. I did read where some vanilla extract makers actually prefer using splits for extracts, and after my experience, I agree. They are also cheaper. I usually get 25 or even 50 beans at a time (the larger quantity you buy, the cheaper it is per bean, so depending on how much vanilla you go through - or plan to make for gifts - you can always buy a larger quantity). Much cheaper than buying smaller amounts, and since I make a half gallon of extract at a time, I do go through a lot. I also experimented with making a batch each using vodka, Captain Morgan white rum, and Captain Morgan spiced rum. I shared them with other bakers I know and we all agreed that the spiced rum batch was the best.

Hi Heidi. What can you use as solvent if you need it sugar free? I know a few diabetics.
Just leave out the honey and use only alcohol or use only glycerin and water. While it is sweet, it is not sugar
