Not prepared 100% authentically but oh well, as long as it's delicious I don't mind. Never seen it with fish but well I knew brits are crazy sometimes. And just by the way to minimize the mess, why not just dip the bites in the cheese instead of trying to spoon it on?

Any sauce you like with fish should work. so personally i think a chipotle mayonnaise would taste pretty damnn good.
