I almost always (not this time) rewind the hardtack clip, viewing it three to five times each time I watch a video that contains the clip. It's just too funny! 😆
Loved the slight amount of shade here. FWIW, these items are all available to me in Jackson, MS- although I think my bottle of rosewater came from one our 6 local Indian grocery stores. If you can get it here, I can't imagine it's that much harder to find anywhere else.
Remember the recent video where "hard tack" was mentioned twice and the "clack clack" didn't happen until the second one? I said "clack clack" to myself for the first one. Ha.
Reasons why I watch Tasting History: reason #3 Recipes, #2 History, #1 The hardtack *clack-clack*. If the video doesn't have a hardtack reference it just doesn't hit the same.
I agree. A lot of youtube channels i watch have a catch phrase or several of them. I will never tire of Steve1989's "nice hiss," or "let's get this out onto a tray." Nor "I have a face for radio, and a voice for print." I could go on. If you have a signature thing, stick with it. ^-^
Mehhhhhhhh it depends. I've lived near some weirdly-scant grocery stores in my time. One that was the ONLY one in the area, I know would not have had any kind of cardamom, and oddly stocked THREE kinds of artificial vanilla extract. But absolutely no REAL vanilla extract.
Well, where I live (which is not the USA) I can find cardamom easily, but only on those "high-end-ish" places. I also prefer to buy spices at the farmer's market because it's always cheaper and better quality.
I could see cardamom and rose water not being available at some grocery store out in the sticks, but the candy thermometer is just unexcusable. You can get one from Wal-Mart, or literally any store that sells kitchen goods.
It’s funny how some of these mean comments are exactly what I love about your channel. The hard tack clip, you rambling, your accents etc. don’t change a thing. You rock!
Honestly, what Max is producing here is a uniquely accessible living history experience. As a military history nerd, it's not something I can effectively reproduce. Well, at least more than once. Around the time I use a reproduction Roman gladius to skewer someone I dislike is about the time I end up with a murder charge and room and board for life. It's just something that's utterly infeasible. But, cooking? We do that anyways. I mean, you should be. For one meal, you can experience something that may have been enjoyed ten, fifty, a hundred, even thousands of years ago. It provides you a compelling, if fleeting glimpse into the human experience from long, long ago. So, Max, your channel is awesome and I hope you continue for years and years to come.
I never understood the whole "this recipe is inaccessible" thing cause i mean the whole point of the video is about sharing history, not really about sharing quick and easy recipes for the home cook, that being said, wishing you, Jose, and all your kitties a very merry christmas and a happy new year!!
Exactly! Like sugar plums, it’s interesting to see what people did without the tools we have on hand today. It’s extremely unlikely I’d ever make them, but now I know what they are 😁👏🏼🎄
Absolutely. The rare exceptions of things that are worth bringing back are a special treat, but absolutely not expected. Most of the entertainment for me is seeing how people used to cook, and what they used to eat, not learning new foods *I* should eat.
@@29jgirl92sometimes I watch cooking videos of things I intend to make to get an idea of how difficult it would actually be so that's a reason, but obviously not the reason we watched this channel specifically
My mother told my siblings and me, "If you can't say something nice, say nothing. " Fortunately, my wife and I can state that we love your channel. The history, your ability to pronounce words of many languages, and your presentations are wonderful! We will taste your 1914 pecan pie this afternoon. Ginny and Joe
The internet as we know it would come to an end OVERNIGHT if posters stuck to "If you can't say something nice, say nothing"! Probably be a much nicer neighborhood overall though.
My granny took it one further, "If there's nothing nice coming out of your mouth, stick something sweet in it." She'd say it and offer a cookie or piece of candy and it was her way of warning us kids if we were being impolite. But it was actually good advice since you're a lot less likely to blurt out something mean if your mouth is full.

I found it easily several years (cough decades) ago in a local market. If you poke around enough, you can find what you are looking for. It's only gotten easier in the intervening years. Heck, I think they even stock rose water at the Midwest US chain Meijer in their "International" aisle.

He has a channel that he's worked hard on and it's actually good content. You don't have to watch it, but you sure will complain. But I guess you're just in the misery business😃
Ralph's is just a regional Kroeger store name in California. If you have a Kroeger, Dillons, King Soopers, or one of the many other regional Kroeger stores, then you essentially have a Ralph's. It's your basic large chain grocer, not a fancy specialty market. It's not even comparable to Whole Foods. Just a basic large chain grocery store maybe ever so slightly fancier than Wal-Mart.
Ralph's can have some bougie stuff, especially at the Fresh Fare branded ones. But I've seen most of these things at Walmart. Can't get more basic than that..
The AI comment is a compliment. Only a guy handsome enough to be cast as Prince Charming could be accused of looking too good to be real. I'm here for the foreign language and the clack clacks! Thanks for your very interesting content. I love it because it's weird and educational, funny and entertaining. Happy holidays Max and Jose.
There I am. A third shift worker. Drunk. Making a creamy penne with grilled chicken and sun dried tomatoes. Just then, a new Ketchup With Jose and Max episode drops. What a Monday.
The joy of this channel is watching someone actually make these crazy historical recipes that a lot of us had heard of but would never attempt/had never seen made before! I mean, almost no one would make Garum, but I sure enjoyed watching you make it and say how it turned out. Whether or not it's tasty is besides the point.
I can't even count how many times I have watched the Garum video it's one of my favorites.. but I'm not going to try to do it myself... Thanks Max for taking us on your brave adventures journeys as we enjoy from the comfort of our homes ❤❤❤❤
Some people obviously don't understand your channel. More than recipes, the history is the important part. I love hearing about the history connection. Food connects us through generations and nations.
The "this recipe is stupid and I'll never make it" type of comments is really something. They really think the channel is specifically made for them. 😆
Max doesn’t start his videos demanding everyone go out and buy the udder of Himalayan mountain goat, and a handful of some long extinct herb and spend a year making some vile fermented concoction. He does the weird, and sometimes vile, cooking so that we don’t need to. Knowing that people actually used to cherish some of these vile concoctions is good enough, and entertaining enough, for me. There have been more than a few of these historic recipes that I’ve made, because they sound good, or are culturally significant to me, or the story is so compelling. Me rambling Some people forget that there are other people in the world, who think and behave differently from them.
@@deannaatkinson3004 It's like the people who comment on recipes that they can't eat various ingredients in the recipe so why did the author post it? Uh, idk? Maybe the author isn't diabetic/celiac/whatever. If a recipe isn't for you, scroll on.
You see that kind of reaction to any content more and more, even games or niche things. Either they will complain a game or something doesn't cater to them, or does not include an option they want, or IF there is such a mode or content, or if it is a less niche thing but also added things for the other crowds, they will bitch and insist that said mode. That their stuff should be the only one and how dare they indulge others.
I'm a Pakistani-American Historian and Author-Illustrator. I also happen to be a great cook (as I am super lucky to be the daughter of an excellent chef.) And I absolutely ADORE Max and his history channel on historiographical, culinary, and entertainment levels. (And yes, my mom thinks Max is handsome, too, like the other viewer's mom!) I have watched Max since 2020 as I battle chronic health issues (have a cozy little history-sci-art channel on TH-cam myself, though it's been mainly dormant since 2020 due to health) due to my Hypermobility Spectrum Disorder hindering my pursuits further. Thanks for letting us taste History with you, Max, and may your charm, kindness, and curiosity remain as potent and sweet as the scents of rose and cardamom in the New Year!
I would say that this is a shameless plug, but I checked out your channel, and it's actually really nice. My artistic skills are equal to zero, but it's always nice and soothing watching others make art.
Your accents are absolutely charming and make me laugh, especially when you do your 1940s reporter voice. And if you ever stopped the hardtack clip I think I might be heart broken 🤣
Surprised by all the "bad recipe" comments. I never saw this as a cooking channel. It's a food channel, for sure, but the recipe I always saw as a bonus. I don't come here for recipes. The food history is right up my alley, and hella interesting. Side Note: You're facial expression in that hard tack clip gets me everytime. Never let it go. ❤
Occasionally I'll try a recipe (the black sauce for wild boar or ham is amazing) but most of the time I'm just curious what it's like. Complaining about the recipes not being to your taste (or using ingredients you can't get or a newfangled high tech candy thermometer) is like complaining that you can't get what Jared is tasting in @WeirdExplorer vids at the grocery store. The whole point of that channel is to see what stuff in other parts of the world is like, as well as how the people who grow it use it, and any historical stuff.
I mean, I enjoy both but I will say, I often get so interested in the recipe that the history which I would normally be very interested in becomes a bit of a frustration while waiting, but I think I actually do cook these more than the average person, and Max had been very diligent in putting the recipes online and in his cookbook anyway.
agree, I'm here to see Max react to the first taste. Never disappoints. you can tell by his expression exactly what he's getting from that bite. The recipe is the bonus to the channel. It's all about the journey through history and can Max do it? will he like it? so much fun. and the hard tack clip never gets old..
Right? If you wanna talk some smack, there are plenty of channels much more appropriate for that - like political channels. 😆 Loads of trolls there to use your wit on! 😆
I’m sorry but your episode ls are perfect. I love the rambling, I love your face, I love your accents, and the episodes are perfection. I recently had a conversation with an eight year old I sold fabric to make a toga who was inspired by your videos. The number of people who missed the “history” point is actually hilarious
The hardtack bit is so good and meme worthy that I have seen it pop up randomly a few times on other channels that have absolutely nothing in common with Tasting History. That cursed baked good gets brought up then you hear the clack clack XD
Thanks for the update, José, it's great to see you again! Max, I'd love a full hour of rambling, and this channel could support it... just saying! My other hot take is that José selected the mean comments because he's so kind. Merry Christmas!
I fucking love that you stick to your idea for the channel and that you keep it history focused. History, and how pleasant Max is, are the things that keep me watching. Imagine a chef in New York city who can't find rose water 😂😂
Or a candy thermometer!!! My grandmother had one in the 60s that my mother got when she married in the 80s! And there were no magical “high end speciality stores” in the mountains back then 😂
Tasting history is not a cooking channel. Most of the recipes Max makes are nothing I would attempt. It’s about the history of it. I love finding out the origins of esoteric foods. Some I’d like to try, someday…. I can’t believe people take the time to criticize and say mean things, for what? Self-gratification? Max I love the concept of your show. It’s fun to watch and interesting to learn where things come from. Thanks for putting yourself out there.
I love Tasting History, especially for the history. There are a lot of cooking channels out there, but I love the historical background of Max's channel. Will I make most of the recipes? No, but I love his enthusiasm for the history of food & how that can inform us of how people lived. Keep doing what you do, we love it!
Never get rid of the hardtack clip. NEVER! Love Tasting History so much. Love the history, and love to see Max tasting unusual foods. You're doing amazing work, Max and José. Keep it up! Can't wait for the next cookbook to come out. The first one has a permanent place on my nightstand and I love browsing through it. I've made a few of the recipe from the show and enjoyed most of them (the ANZAC cookies, the Tarte de Brie, the orange syllabub and the Irish stew).
Dude, you are wonderful! Keep doing it, and bringing true, serious, historical study to food. It’s an essential element of the entire human experience. As a historian, I have to say, you are the real deal! Thanks for all of it! ❤
4:35 We need those rambly, uncut, stream of consciousness type videos. Would love to put those on while I cook or wash dishes (the way I already watch your normal videos)
lol I'm sorry but that book of a comment was NOT valid. They're an "avid cook" but don't have a candy thermometer? Think they need a "high end store" for rosewater? XD C'mon man. Max (Not Mac lol), you are amazing, and I love what you do. I get the point of the channel even if not everyone else does lol The history is amazing and I am SO impressed with how you spend so much time and effort to give us the most accurate history that you can. I very much appreciate you. And yes, you're hunky lol
That’s exactly what I was thinking!! Ive gotten rose water at Walmart before😅. Maybe this commenter wasn’t aware of it as an ingredient, so it just had never looked. Also I think it’s always been very clear that the main focus is the history not really the cooking.😂
I agree with you, OP, but I'm also gonna say I guess it depends upon where in the world they live. They said they weren't in the US. I just moved back to the US from Rwanda and could not find a myriad of things at the largest grocery store in the largest city in the country. And shipping stuff there is nearly impossible. But I also wouldn't attempt to make something if I know I don't have access to the ingredients. And I certainly wouldn't be mad about it
@keenbtf They didn't say where they were from. I suppose if they live in a rural location/ a country that isn't diverse, they wouldn't have the choices that are available in metropolitan areas. Still, you can order ingredients online. And the point is the history!
@@debrathornley2974They said they couldn’t find rose water even when they lived in New York (city, I assume) so presumably they just have never looked at anything not on their grocery list.
I got my wife into Tasting History about two years ago when she saw Milo in a video, and we've watched every episode since. We love the hardtack joke every time, even clacking our hands together with the cut. Three years of watching down, hopefully many more to come. We love you Max, Jose and Milo too.
Oh man the comment about how none of the ingredients are available and the recipes are unattainable. That got me annoyed. Some aren't attainable but that isn't the point. The point is that we are learning history with food as kind of the conductor! I genuinely was arguing out loud with the comment there. Love the cute shot with you, Max and the kitty at the end. ❤
Also, I do believe that Amazon has like everything and the most ethnic groceries will have things that you can’t find elsewhere and I live in Central Texas and there’s probably a Rosewater in Orange Blossom at the middle eastern bakery in Austin so you know…
Hard tack clip, rambling, and history of recipes I may never make, are what I'm here for! You just keep doing what you do- I'm delighted whenever I see a new video from you!
You look like AI because you are flawlessly handsome. And now I want to make jalebi to spite that guy. (Though, does that mean he's been making all of the other recipes?? Impressive!) Even out in the sticks in Maryland you can get rosewater at an international grocery store.
Anyone who writes mean comments to you has real issues. Your programs are so fun, informative and just bring joy. So much sadness in this world. Thank you for making the world a little better.
I find it hilarious how many people seem to misunderstand your videos and asume these recipes are meant to be recreated at home 😭 I can't imagine their faces when your pirate's leather and jellyfish soup videos pop up on their feed. (I would also still LOVE to see a BTS of how you make your videos if you ever have the time!!!!) Merry Christmas guys!
YES! My boyfriend at first thought this was the wacky historical recipe dude and was not into it, then he realized Max is more of a historian. He asked me at one point if Max ever made anything that he disliked. I immediately pulled up the leather video.
Your channel appeals to almost everyone I recommend it to despite their background. My son's high school teacher has even shown your videos in class. And, the clack clack never gets old.
I love your channel. Haven’t missed an episode since I found it a couple of years ago. I even preordered the book and got a signed copy as a gift for my special daughter in law. So as an ardent fan, I’m asking politely: please, keep doing exactly what you’re doing. It fills a very unique part of the internet, and brings millions a lot of pleasure. Or as the one commenter’s mother said, “We wanna see the ‘hunky dude!’ Merry Christmas!🎄
My daughter and I find your rambling to be incredibly soothing. Could we have a video or two of unedited, ramble-ful episodes? For us to put on in the background while I'm cleaning or baking or whatever. It would really help to reduce stress in our household. Because who doesn't want to hear the ramblings of a beautiful, beautiful historical chef?
I love the clacking hard tack! I laugh, every time, even when I anticipate they are coming. I think the repetition makes it even funnier! Sometimes we need sophisticated, lofty humor (which the channel so often provides); sometimes we just need clacking hard tack.
😂 "The hunky guy". I was watching your short on Everlasting Syllabub (which resembles my mother's eggnog‽) yesterday and over my shoulder, my wife happened to catch your eyebrow raise right before you tasted it. "Oh, now i see why you watch him!", she said. I'm not going to be the creepy guy, and for sure the history you present is the main reason I watch your channel. But the scenery doesn't hurt! Merry Christmas!
Your voice and mannerisms are the main reason I've recommended this channel to others (as well as wow factor, such as the Molasses Flood). They are fantastic. Not only is your channel entertaining, but soothing. I watch your videos throughout, but specifically when I'm overwhelmed or having a bad day. Your videos are distracting, positive, and entertaining without taking up literal hours of my time. Thank you Max for this channel, and Merry Christmas to all of you. P.S.- I have literally never cooked anything from your channel and will not apologize for it, lol. I watch to be entertained, not motivated or educated in culinary affairs.
The Great Molasses Flood video hit me close to home. I grew in the Boston area. I would often stroll through the North End of Boston in the summer. You can still catch a whiff of century old molasses creeping out of the deep crack and crevices. I make the Boston Brown Bread and Hermit Cookies on the regular (just finished off a batch yesterday). The bakery I worked at in my teens (many years ago) used to make hermit bars. And I’ve eaten my body weight in them over the past half century. And it’s a great video.
Clearly, the people making negative comments are clueless to what your channel is about. Keep doing what you’re doing. My husband and I love your videos! The “hard tack” clips always make us laugh!
I Enjoy your accents, and honestly, one of the things that caught my attention besides the history (I love learning history- especially how they did stuff- like cooking,) is your excellent diction. Most people's speech these days is so lazy! Your speech is very precise and clear! I also enjoy your "rambling:" gives/shows character & personality! I love that you try totally "out there" recipes from the past & give an opinion on them. It allows us to have a taste vicariously of things we might never try! I also like that you give the recipe in a format that we can try it if we'd like to!! As a homeschool mom, combining the math of cooking with the uniqueness and culture of history is such a great tool to keep my rambunctious, non-studious boys engaged in hands-on learning!! Love your channel & keep up the excellent work!!! ~Liz
Whaaaat? What bad accents? I am immensely impressed every time. And you are NOT annoying. I truly think you and José are the most lovely people on the net. Merry Christmas Max and José.
Not surprised that there are not that many mean comments. But, even if you would be fine with it, please do not stop the cooking. The recipes may mostly not be something i would want to try myself, but every now and then there is one i really want to try out. Even if the historical recipe is not as good as a more modern one there usually is a choice of newer/alternative recipes in the comment section. So your channel is a treasure trove of recipes that are unusual, from other regions or times gone by to find inspiration.
the hardtack _clack clack_ with the face made me spit out my pop- now my keyboard is sticky and my chest hurts from laughing too hard DAMN YOU MAX MILLERRRRR!!!!
Honestly I can't imagine you getting mean comments. You have one of the most interesting, entertaining, and wholesome channels on youtube. Happy Holidays to you and Jose and all your families!
7:40 I agree, Max- the hisyory is what makes your channel stand out for me. I am very unlikely to attempt pretty much any of your recipes, although the Babylonian lamb and beet New Year stew may get an outing next time I want the kitchen to look like a crime scene. Keep doing exactly what you're doing! A thought for your channel- and you may have already done it, apologies if I've missed it- but I'm quite fascinated by the history of adaptation of ethnic cuisines, especially "curry". I've eaten plenty of Indian curries, but also Dutch and Japanese curries. I grew up eating lamb and even sausage curry (made with mild link sausage) in Australia, probably a post-colonial legacy of the British Empire. Just a thought. Thanks again, and hi to Jose and Milo, too!
I like being able to see the historical process of the recipe and what it might taste like or look like in person, and I think it adds content you really can't get from a more "documentary" style video. I very much support the value of tasting history's videos as documented recreations and analysis of historical recipes. It's not just reciting information.
I often listen to your videos while I’m doing laundry or whatever, and when I hear the word “hardtack,” I KNOW what’s coming and I start to giggle. I can picture your face and the “clack clack” perfectly even when I can’t see it. Please never get rid of the hardtack clip 😂😂
Hey Max! My wife and I love the channel and the history of the food and recipes. Let the haters get their frustrations out and laugh as this video portrayed perfectly. I loved the WWII ration recipes, I love reading and watching video of all kinds of historical stuff. When I stumbled across your channel with history in the name I was intrigued. I bet I watched two hours of videos the first time. Keep the great videos coming! My wife has been ill for a extended time and I have become the chef. I always enjoyed cooking but have stepped up my game in the past year. Your videos have been inspirational. Merry Christmas and Happy New Year to you, Jose and the 🐱.
I want to have tea with this "rambling, annoying man." Hardtack is definitely required! I love you, Max. I'm so glad you make this content and that I found it. Your cookbook is spectacular. Oh, and rosewater is available even in the most rural of groceries around where I grew up. But, yeah, please keep the beard. :)

Right? It's okay that they don't like it. Nobody forces them to watch. This channel is not for them. It's for us.
Same, if anything, I'd like more rambling, accents, and hard-tack, ('clack-clack!')
Exactly!!!
Exactly! 🎯🎯
Maybe leave in more rambling would be a good change. I love it.
Right, that's good! I WANT to watch somebody make something I would never make myself! Otherwise why watch the video??
Exactly! Like sugar plums, it’s interesting to see what people did without the tools we have on hand today. It’s extremely unlikely I’d ever make them, but now I know what they are 😁👏🏼🎄
Max also tends to go out of his way to warn us that we probably don't want to try certain recipes ourselves. Sugar plums and garum come to mind.

Well said 👍🏼
The internet as we know it would come to an end OVERNIGHT if posters stuck to "If you can't say something nice, say nothing"!
Probably be a much nicer neighborhood overall though.
Your mother is a wise lady.
I'm a straight man, 57, from dam ole' Alabam, been following you since the start of the Big P. My wife was going through Chemo, confluent with the advent of your channel. This Christmas; My step daughters got me all new knives and pans from certain well-established chef's brands,, and all of that, my friend, is in part, to you. Merry Christmas, and thank you., and Happy New Year, to your husband, and family! See you next year, brother!

Yeah, that one made my wife angry. She's ranting about it right now. Rosewater is at our grocery store too.
Takes like 2 seconds to google where to find some too
I found it easily several years (cough decades) ago in a local market. If you poke around enough, you can find what you are looking for. It's only gotten easier in the intervening years. Heck, I think they even stock rose water at the Midwest US chain Meijer in their "International" aisle.
2:34 -- I think Max's accents (especially when he fakes British accents) are hilarious. Keep it up, Max!
As a civil war reenactor. I will never be upset about a hardtack reference. Also it's the history I enjoy the most.

7:46 "we have it at Ralphs 💅 " 😂😂😂 never change Max
Idek wtaf Ralph's is xD But thats like 80% of the stores ppl namedrop assumin everyone has the same store xD
It's just a basic chain grocery store, equivalent to your local regional chain grocery store.
I thought this was a Norm MacDonald reference. Lol
The history of a culture is food, so keep on giving us food history. Man does not live on thought alone.

Yes ❣️
Exactly
The "this recipe is stupid and I'll never make it" type of comments is really something. They really think the channel is specifically made for them. 😆
Karen's.😏
Max doesn’t start his videos demanding everyone go out and buy the udder of Himalayan mountain goat, and a handful of some long extinct herb and spend a year making some vile fermented concoction. He does the weird, and sometimes vile, cooking so that we don’t need to. Knowing that people actually used to cherish some of these vile concoctions is good enough, and entertaining enough, for me. There have been more than a few of these historic recipes that I’ve made, because they sound good, or are culturally significant to me, or the story is so compelling.
Me rambling
Some people forget that there are other people in the world, who think and behave differently from them.
The Trans-Atlantic voice is primo. Could just picture hearing him over the radio reporting on anything
That the food we have now is superior to the food we had through most of history is easy to believe.

I fucking love that you stick to your idea for the channel and that you keep it history focused. History, and how pleasant Max is, are the things that keep me watching. Imagine a chef in New York city who can't find rose water 😂😂

@mialemon6186 People are crazy
Keep it up! I very much appreciate you. And yes, you're hunky lol
I wouldn't even know how to reply to the rosewater comment with how badly it's disconnected from reality lol

I did the pumpkin cheesecake, but I think that was the only one. The recipes are not why I watch.
I also have no desire to make the recipes but I love watching him taste them. There are some dishes I wouldn't touch w/ a ten foot pole. Ick.
Agreed!
Congrats to Max on his success! So deserved.
So your channel is a treasure trove of recipes that are unusual, from other regions or times gone by to find inspiration.
lol I like that the person is upset about cardamom but doesn’t say anything about sow’s udder.
Merry Christmas Max & Jose, and Happy New Year!
Big fan. Mean comments are just mean people venting inferiority and jealousy.
the hardtack _clack clack_ with the face made me spit out my pop- now my keyboard is sticky and my chest hurts from laughing too hard
DAMN YOU MAX MILLERRRRR!!!!
Hunky Grandson Dude is back, y’all!
The only mean thing I can say to Max is how dare you entertain us with your culinary sorcery so consistently 😂
I’m so glad you can laugh at the mean comments. They are from people who live miserable lives and want you to be as unhappy as they are. You and your channel are perfect and you ARE a “hunky dude”.
Your 'rambling', the timbre of your voice, your accents, THE HISTORY, AND the hardtack clip are all reasons I LOVE your channel! You're the best Max. Keep going!
