Why was the first batch of vegetables discarded? Can't you just use a small amount to create the stock, and then add the rest to add the crunch and colour in the Thukpa?

Awesome recipe one pot meal. Is Timur or shezwan pepper means our Indian spice Tirfal not Trifala. Trifala we use in maharashtrian fish curry specially for bangada (macaral) curry. Plz let me know

We eat chicken or Pork thukpa here in northeast,
So I guess you can use mutton too, provided soup shouldn't be smelly....
