Had the same issue and found the answer on the trailblazer community.
It certainly isn’t very intuitive but you need to “enable” this feature:
1. go to Setup > Salesforce Mobile App > Enable Dynamic Forma on Mobile
2. refresh your LEX Page and the functionality shows up
just did it myself, works like a charm 👍🏻
