HOW TO MAKE PERFECT RAJAS | Poblano Peppers, corn & creamy sauce

  • Poblano Peppers with corn and cream (known in Mexico as Rajas con Elote & Crema) is a traditional, delicious staple dish that many are afraid to try making it at home thinking it’s complicated and too time consuming. But in this video you will find tips to help you try these at home!

    Ingredients
    • 8-12 poblano (chile ancho verde) peppers
    • 1 pack cream cheese
    • 1 can Media Crema
    • 2 garlic cloves chopped
    • 1 white onion sliced in half moons or rings
    • 1 cup corn kennels (fresh or frozen)
    • 4tbsp butter
    • 2tbsp olive oil
    • 2tbsp bouillon
    • Garlic salt
    • Pepper to taste
    Directions
    1. Wash and fully dry the poblano peppers. Place on stove on mid-high heat to blister the skin. Turning them continually to ensure they are charred all around, placing special attention to each one as they char at different pace and in different places. Once each one is done, place in a plastic bag to sweat. Cover it and only open the bag when placing each one. Once they are all in the bag, close it well and leave them to sweat while you prep the rest of the ingredients.
    2. Meanwhile, make the sauce. In a blender, add the full pack of cream cheese, one or two garlic cloves, 1 can Media Crema, 2Tbsp bouillon, garlic salt, pepper to taste. Blend fully and set aside. Taste and adjust flavor.
    3. Slice 1 white onion in half moon slices or rings, chop 1 garlic clove and get the rajas ready.
    4. Getting the rajas ready: take each poblano pepper out of the bag and peel the skin completely off. NOTE: DO NOT RUN IN WATER AS YOU WILL WASH AWAY THE FLAVOR. You are removing the skins and cleaning them without the aid of water to preserve flavor. Remove seeds and veins with a spoon, then slice in long strips.
    5. Now that your poblano peppers are peeled, deveined, deseeded and sliced, your onions are cut and your sauce is ready, you can finish the dish.
    6. Heat a large sauté pan to medium heat. Add 4tbsp butter and 2tbsp olive oil or avocado oil (I like to use garlic infused olive oil. Then add the onions and sauté. Add fresh crushed pepper, garlic salt then the chopped garlic. Mix well until aromatic.
    7. Then add the sliced poblano peppers, mix well, add the sauce and mix well. Lastly add the corn. OPTIONAL: if you wish, you can add mozzarella cheese to make it cheese. Taste and adjust. That’s it! Enjoy!!!
    MAKE IT A MEAL
    You can add rotisserie chicken or shredded chicken to the rajas (for better flavor, add the cooked chicken after the onions and before the rajas.
    You can serve them as a side dish, or inside tortillas as tacos, or serve with white rice.
