Personally I think all the points you make, fabric, stretch, wool etc: apply to all knitting not just seamless. I know to my cost that Cotton needs to be made up in a smaller size as it will stretch terribly and mine are not seamless. I do agree you need a good neck on any garment to hold it in place. Adding a crochet bar between shoulders points will help keep things in place too. I thought you might have talked about a yoke when knitted top down. The garment can pull up at the sides when arm lifting or pucker across the chest when too tight and when the neck has not been designed to rise up at the back this will sit wide around the shoulders. I wait with interest to hear more about seamless knitting.
