    One more question can I use metal crown cap to cap bottles? Thank you.

      People do use metal crown tops for kombucha, and quite a lot of Kombucha Companies use them too, as long as it doesn't stay in contact with the kombucha it should be fine. However it may not carbonate properly due to no air tight seal.

    I have a question that was not covered. The starter Scoby and kombucha pack said it was for one gallon. It seemed rather small, it has been about 30 hours in the new black tea/ sugar mix and still no sign of life. The progress pictures in the book show some life at 24 hours but the book uses a larger Scoby. Maybe I should have used the small Scoby in half a gallon of tea to start with so the concentration would have been better than being diluted in the gallon of tea. I guess I can expect May twice as long to get results with a small Scoby.

    Hello, thank you for a very informative video. How long is that bottle of kombucha that is traditionally made stay in the shelf without getting vinegary and its alcohol content increasing?

      They can last a while, personally I'd say you'd want to drink it within 30 days.

    I fermented by water kefir in a square bottle, unknowing it was bad. It exploded in my boiler room! Massive mess.
    I have a question - I know you said it doesn't matter where my scoby sits.... But mine seems to want to climb out, it's mostly out of the water. I keep poking it back in but doesn't want to stay below the surface.

      Its no problem basically 😊 the reason for that most likely is some air /carbon dioxide trapped inside the scoby.

      Don’t worry you can use any screw top bottle to carbonate, as long as it goes on tight :)

      I’ve been using old glass commercial Kombucha bottles to make my own Kombucha for 11 years. They work great!
