20cm (8 in) tin Bake in a preheated fan oven 160°C for 40-45 minutes.
This fruit cake is best eaten the day its made.
INGREDIENTS
100g unsalted butter, softened
100g soft brown sugar
225g self-raising flour
2 large eggs, beaten
3 tbsp milk
200g mixed dried fruit
1 tbsp demerara sugar
To make your own self raising flour!
Sift 2 teaspoons baking powder to each 150g plain or all purpose flour.
