Mango Fantasy | Yummy & Simple pudding | Shweta Mohan with Mother-in-law Padmaja Shashi

  • Hello everyone! This time, I'm excited to present to you something other than music. It is a dessert that mum-in-law had made and I enjoyed eating. I wanted to share with you all how it's made. This is not a cooking series. Just a one-off thing to share, the little joys of life :) After all, what is life without Love, Music and Good Food!

    Ingredients -
    Mango of your choice (ripe and sweet) - 1
    Milk - 1/2 litre
    Custard powder (Vanilla flavour) - 4 tablespoons
    Sugar - 6 tablespoons
    Vanilla essence - one cap
    Coffee decoction - 1/2 cup (1/2 teaspoon coffee powder mixed in half cup hot water)
    Marie biscuit - 8 biscuits
    Milk chocolate - 50 gms packet
    Method -
    Cut the mango into tiny pieces and keep.
    Add a little milk to the custard powder and mix well.
    Next, to make the custard, heat the milk. Add sugar. When almost boiling, add the custard powder mixed with milk and keep stirring until thick. Make sure there are no lumps formed. Add one cap vanilla essence and mix well. Allow this to cool.
    Next, to make the base of the pudding, break the marie biscuits into halves and dip them into the coffee decoction and quickly take them out. Place them at the bottom of the pudding dish.
    (I love the biscuits soaked heavily in the coffee decoction...yumm)
    Next, layer half of the cut mango pieces on top of the biscuit layer.
    On top of this, pour the custard.
    Keep this is the freezer for 2 hours.
    Melt the chocolate using double boiling technique. Use 2 or 3 tablespoons milk to make it syrupy. When done, allow this to cool a bit.
    After 2 hours of being in the freezer, take the pudding dish out.
    Pour the melted chocolate on top of the custard layer.
    On top of this, layer the rest of the cut mangoes.
    Now the pudding is ready to go back into freezer for half an hour. After half n hour of being in freezer, take it out from freezer and keep it in the fridge for setting for another 4-5 hours.
