I don't like adding sugar in my menudo version. I'd like to stick to the very traditional way of cooking the dish but with my own modern twist. For ensuring no after taste from the liver by boiling the meat and liver together before frying. It will definitely improve the taste. Thanks.

Verry true, if you season late or at the end the taste is kinda weird, i mean the seasoning and the dish it self don't even mix you can taste the seasonings apart from the dish it self
