Lamb Madras Recipe | How to cook Madras Lamb Curry | Chef Ajay Kumar

  • Madras, with a few other curries, became popular at the beginning of the 18th century when the merchants started importing spice mix from India to help retired East India Company officers of London to satisfy their cravings for Indian curries. The first bottles of the curry powder ‘Edmund’s Empress’ were manufactured by Barnsbury, London.
    Since then, Lamb Madras has found a permanent place in the hearts of curry lovers. The authentic Madras curry has much more to offer than a burning tongue! This classic curry has uniquely fruity, fiery, and rustic flavours from the southern part of India.
    In my opinion, it is vital to make your own Madras spice concoction for the original flavours with the precise amount of spices to get the best out of Madras and follow the specific cooking technique I have tried to demonstrate in this video.

    Madras Spice Mix
    2 tbsp coriander seeds
    1 tbsp cumin seeds
    1 tsp mustard seed
    1 tsp fenugreek seeds
    1 tsp black peppercorns
    2 tsp fennel seeds
    3-4 inches or cinnamon sticks
    5-6 cloves
    2 tsp turmeric powder
    1 tsp red chilli powder (medium hot)
    Recipe
    Serves 3-4
    Lamb Marinade
    1 kg lamb curry cuts
    2 tbsp madras spice mix
    1 tbsp juice of a lemon
    1 tsp salt
    Madras Curry Base
    3-4 tbsp vegetable/coconut oil/ghee
    1 tsp mustard seeds
    10 curry leaves
    3 onions finely chopped
    1 ½ tbsp ginger and garlic paste
    4 tomatoes finely chopped
    2 tsp madras spice mix
    2 tsp red chilli powder
    1 tsp turmeric powder
    2 tbsp tamarind pulp (avoid concentrated paste)
    2 green chillies finely chopped
    Salt to taste
    Hot water as/if required

    I really really love Indian cuisine. I've read a lot about it for months, bought all of the spices and key ingredients on line just to be able to cook all the dishes in a proper way, and now that I got them I am going to start to try your recipes. I've been following a lot of Indian chefs on TH-cam channels but I can really and honestly say that your recipes are the best. Started seeing one video and then another and unother and now I just can't stop. I'm binge watching the channel. Thank you so much for that. Greets from Colombia!

    Oh wow - ive just cooked this but with 500g of Lamb so adjusted things slightly - took it slow and the lamb was so tender - best home made curry I’ve made with Lamb ( been cooking curries for many years) Thank you for sharing this wonderful recipe - I added a bit of tandoori masala to my spice mix and used a combination of fresh tomato with some Cirio paste - fantastic ❤

    Excellent. I have tried quite a few curry recipes from youtube and this one is the best by some margin. I couldn't find lamb with bones so I just used 800g of chopped shoulder and it was lovely.

    Excellent FANTASTIC receipe ❤ never seen it before madras curry like this..the best part of the receipe you did not add any water, people have no.idea that when they add little bit of the water in LAMB OR CHICKEN THEY RUINED THE DISH. ❤

    I tried this last week. Sadly, it was not a success. This was entirely down to me, you see I have two jars of homemade chilli powder from homegrown chillies. Sadly, I put my hand in the cupboard and grabbed the wrong one, 100% Carolina Reaper! Now, I like a hot curry, but I have my limits! This was well above those! I stuck it in the freezer for future reference! Yesterday, I made this recipe again, but with no chilli powder, got last weeks out of the freezer, and mixed them. I’m glad to say it was delicious!

    Madras is my favourite and I have tried many recipes on TH-cam but this one surpasses them all. Worth the extra effort to toast and grind the whole spices

    Well, I finally tried making this Madras 👍 with a few modifications: made it with 600g lamb off the bone, so halved the quantities of all the spices and other ingredients and used a small amount of Thai tamarind paste - It turned out delicious, spicy, not too hot, well pleased and fried off some mushrooms apart and added them to the curry at the end-worked well. Thumbs up from my wife and daughter 👍👍

    Hello Ajay, I was wondering what had happened since it's been a while since you posted a new video but you've lived up to your reputation and come up with another classic curry dish with this one. I'll certainly give it a try. All the others I've tried, Garlic chilli vegetables, Karahi Chicken, Lamb Kebabs, Chicken Jalfrezi and the last one, Green Chilli Chicken have all turned out delicious and got the big thumbs from my greatest critics (my wife and my daughter). Keep the videos coming, please.

    That fresh masala will make this dish outstanding, and another thing I love about your cooking, look at all that oil...none of that 2 tbsp nonsense!
    Looks fabulous, cant wait to make this, its been in my recipe notes for a few months now, this weekend, be rude not to!

    Good lord, each time you lift that lid off, I think 'it cannot look any better', yet each time it does! Will definitely try this. Where I lice in Newfoundland I can by lamb that's raised on a small island on the coast and is salt-grass fed, best lamb you will ever eat.

    Thoroughly enjoyed this dish. It's my favorite at a restaurant in Houston, Texas. I've eaten a lot of Indian food across the world and this is a great recipe. I personally thought it needed a little more than the recommended spice and we'll try it again more of the madras spice. But the instructions and video were all top-notch. The family loved it!

    please do not be offended when i ask you this question, do you use a base gravy when preparing food in your restaurant or do you prepare the food and cook like this video, the west end of glasgow had amazing indian food restaurants possibly the best in britain but nowadays the indian restaurants use quick methods which i feel are not authentic anymore, by the way i found this by chance as i follow other indian chefs, i hope to bring my family to your restaurant as we are all indian food lovers, there you go i have just subscribed, thank you, take care and stay safe.

    Here is a fast curry:
    Serves 2
    1 onion, 1lb lamb or beef
    2 potatoes chopped
    1 tbsp corriandar ground
    1 tbsp cumin ground
    green chillis to taste (chopped in half)
    3 cloves garlic
    2 VEG OXO
    Fry meat, add spices and fry a while, add rest with water to simmer.
    Job done, use pressure cooker to cook it in 30-40mins, or longer in pan.
