I friend just found Coconut Condensed milk. And his Flan separated as it cooked.. I don't think he mixed it well enough and may not have had enough eggs. He made it the way he would have with traditional Flan. I'm SOOO glad I stumbled across your channel!

Oh no! ... don't worry it happens to the best of us! The flan breaking is more often than not related to not enough fat. Either from the milk or not enough eggs! Sometimes the less expensive coconut milks seem to be very watery although they taste good, in this case you can add one whole egg to help it firm up. Not as common it either low temp below 350 or not baked long enough. Because the dial on your over says 350 it does mean it is! That's why I recommend turning off the over at the 50-55 minute mark and just leave in there for another 20-30 minutes.

Bendiciones

I added coconut cream to mine and substitute the vanilla extract with rum

.... AWESOME! I just made one a little different as well with coconut extract instead of vanilla and Grand Marnier for tomorrow's dinner, keeping my finger cross!

I made a version of this yesterday using my normal recipe which is everything in the blender to mix. I normally use just 3 eggs and the rest was as per your ingredients. I also normally cook at 350 for about an hour. That was not long enough for this. I added probably another 15 to 20 minutes and tbh it was still a little soft. The flavor was delicious so next time I will add more eggs and see how that works out and I will try your cooking at 400 for 45 minutes and see what happens there. Definitely very coconut flavored and sweet. The actual condensed milk is so oily it’s almost disgusting, but the blender made it cooperate perfectly. It was greasy to clean afterward though.

…thank you for sharing! Consider using a low-fat option. All we are seeking from the milk is protein the fat count is irrelevant, so with that said, make sure the protein number is not too low compared to the regular milk. So far my best results has been 4 yolks and 1 whole egg! FYI - I was involved in an accident and have been off the grid for a while, but I am looking forward to getting online soon with a new twist on the *coconut flan* recipe. Seems that many people are struggling to find coconut condensed milk but I have come up with some options.

I make this all time, we have milk allergies. There's also evaporated coconut milk.

    what about using Coconut sugar?

    • @CubanRedneck

…thank you for commenting. To be honest with you, I have never used that! I have seen it in the baking aisle, but I am not much of a baker. I made one for Thanksgiving that was on point taste-wise, and everybody that came over claimed it was the best so far, but it was a little too soft for my taste! I am trying again next weekend. Hopefully, I can have version 3.0 published before Christmas!
My goal is a clean coconut taste without the texture you get when you add shredded coconut! The issue that I am having is that coconut taste "IMO" is getting blurred with the sugar and other ingredients….
I am almost there! Stay tuned! ..and once again, thank you for commenting!
