The game does make it a lot harder in rivalry games. I beat Oklahoma State (5-3) with #3 Oklahoma (11-0) 17-13 and I could only run and couldn't really pass. It's good can't wait for the next one!
Some games have a personal difficulty adjustment system in them. It based on the player's performance i.e. play well, game gets harder...play bad, game gets easier. RE4 is known for it because it never tells you that. It wasn't revealed until years later. The NCAA video games may very well have something like it. We already know that the AI adjusts to your tendencies so I wouldn't be surprised.
