The color/mono switch likely puts the video card in Hercules/MDA mode which runs at a different frequency than your CGA monitor supports. If you have a MDA monitor it should work with the system in mono mode.
Yes, that's what it does. I had one of these in the 90s and managed to hook a 9" Magitronic monochrome monitor to it to see how it differed from the original monitor.
Please consider archiving the disks for posterity to the Internet Archive. Those are some really classic software programs and it would be a shame for them to go to waste!
