The reason the tortilla chips tasted so different from the ones you buy at the store is because those are corn tortilla chips :) you used flour tortillas so the texture and flavor came out different but they still looked really delicious!
I haven't fried a flour tortilla in oil, but I've pan fried them, and I think they're better than corn tortillas in this way. But that's just my opinion. ^_^

Plus the cutting tool you were trying to use is called a mandoline slicer. Going slow isn't gonna do anything. You gotta swipe the food fast to get good cuts.

I do the fried tortillas all the time and I coat them in cinnamon sugar mixure. It is one of my favorite snacks. My family loves them. :)
