Good cheat addition to a jerk sauce? HP sauce. Weirdly. Has all those typical spice, allspice, fruit and sweet elements you associate with jerk flavours! Can mix with Encona Scotch Bonnet for a mad quick glaze.

We marinate in Florida for 5 days… grill over pimento logs… most in the world don’t have access to pimento logs but soaked all spice seeds thrown on the coals works too … usually served in Florida and Jamaica with plantains and macaroni pie… but Big Has has the basics going on!!!
