    Outside temp is 110 but I still had to make it and glad I did. Really deelish. Grilled ham sandwich with generous spread of horsy mustard and swiss accompanied the bowl of wonderful soup. Will make this a regular menu item.

    Made this yesterday. Good and close to La Madeleine, but not quite there yet. May need more fat or butter or thicker cream. I used San marzano tomatos from Cento. 28oz. Overall I added more cream and butter. Would make again some cold winter day.

    That is dicing the onion the hard way. Cut the top off and halve the onion leaving the roots intact. That makes each half easy to peal. Then you have a flat surface to keep the onion half steady. Make a few slices not cutting through the root then slice down the length of the onion producing a dice. Some cooks make several crosswise cuts, but the dice falls apart into small pieces without this extra step.

    I think I forgot the basil. Secret is to leave it in fridge a day or two. Afterwards it did taste like the real thing.

      Hi Evelyn, I made this while we were in lockdown and only had tomatoes with basil. If you're making this with a can of plain tomatoes, you can add fresh or dried basil to taste. I would start with about 8 - 12 fresh basil leaves.

    The onion takes 5-7 minutes to caramelize. The garlic will start burning after two minutes. Do you really want to burn the garlic?
