Really not bad. I'd suggest to use the bottom deck for the machinery and the hold for cargo and food, the bow up to the cargo hatch for the crew, the middle deck at midship for 2° class, the stern for 3° class and the upper deck and superstructures for 1° class. And don't forget the spaces for the officers right behind the bridge
I would highly suggest using liners from 1899-1910 as inspiration. My main recomendations would be WSL's big four Cedric, Celtic, Baltic, Adriatic or something like Oceanic of 1899. That way you capture the looks and vibes of a classic liner without entering the territory of the larger liners like the Olympic class. Would probably work well for a non modded work bench.

If you make it wider, you should make the bottom wider than the top, mostly because so that the ship will be more stable both in and out of the water, but also for a bit of accessory, also you could add the crew rooms there if you actually do my suggestion
hey frantic! i found some cruise ships on the workshop they work but the issue with the soregin class has the starters in the engine room and the engine room is hard to reach

In case you didnt know, the hull of an ocean is a dark colour because they used to load coal through the side of the ship which would leave sut marks
