Yeah, crisp-bread is a bit tough sometimes! Just need to get used to how to eat it, kind of like getting that one tortilla chip corner stabbed in the roof of your mouth 😅. Usually you don’t use 2 pieces, it’s just an open faced sandwich; I guess someone thought the American market wouldn’t “understand” that 🤔
I know it goes against all tradition but what are the veggie alternatives to salted shrimp and fish sauce etc etc to make kimchi? I really want to make it but I am vegetarian, I have found veggie fish sauce but no idea re the shrimps
You don’t need the shrimp then. You can probably add something like shiitake mushrooms so that you’ll still have the Unami flavor. Vegan kimchi def tastes different than regular, but it’s still good! It reminds me of a spicy version of sauerkraut.

You can add msg powder as the umami component. Not the same but good enough and its easy/cheap.
