    For a while now a standard in my breakfast rotation has been a big hunk of sourdough toast, a thin slather of curry paste, topped with a healthy dose of apricots jam. A not too sweet fruitiness paired with a nice heat and savory goodness. It rules.

    Speaking of peanut butter.. Toss some noodles with some curry paste and peanutbutter for some thick and saucy noodles, add whatever extra veg or protein you want for an easy meal. The "just peanuts" peanut butter types are better for this application IMO, and it also works great with almond butter.

    regarding the sausage recipe: In thailand there's a dish called phad phet (spelling is off my bad) but it's basically minced meat sautéed with curry paste with added garlic, chilis, fish sauce and whatever else you want, usually finished with chiffonade basil and eaten with rice. a great recipe if you want to forgo the patties and loads of fun to study fry if you have a wok

      @@eZU4nQsWN9pAGsU38aHj it absolutely does. you know what else is good is garlic/olive oil ice cubes. you usually use garlic with oil, garlic goes bad quickly, so you blend it up and fill an ice tray with that delicious liquid

    Thank you for introducing me to the idea that food components can be swapped out/replaced with alternatives, and that most foods have a balance of different components.     I might not be making curry paste anytime soon but I love the lesson of critical thinking and versatility in the kitchen. I have a homemade teriyaki sauce that makes a great base for potsticker dipping, I just dump in black vinegar until it’s thin enough and add Sri racha until it’s spicy enough.
    This way I don’t have to wait until it’s teriyaki time again to get use a sauce that required special ingredients.

    You kind of covered it with the egg, but I have a Jamie Oliver cookbook where he just rubs curry paste on a chicken breast before pan frying it which was great when I tried it. I also wonder about using curry paste with some neutral oil as a seasoning for roasted potatoes or vegetables. I guess the main lesson here is that we can treat curry pastes as a much more flavorfully deep spice mix that we can add to anything. :) Love the video

    I used this video for inspiration for some Thai chicken meatballs, where I added fresh curry paste to the meatballs before rolling them up, searing and then cooking in a coconut red curry. It came out absolutely fantastic! Thanks for the recommendation and idea!

    My favourite is fishcakes. About equal amounts of lightly steamed white fish and mashed potato. Add egg to bind and flour to get dryness/wetness ratio correct. Add Thai curry paste (especially one that has lemongrass) and it just brings it home. Make thin and shallow fry. Hell yeah.

      Does the white fish need to be partly or fully cooked through initially? I don't know how to steam it / don't think we have the equipment to do it ha ha

      @@Metallijosh100 I usually go fully cooked but if it's not quite there it doesn't matter as it's about to get deep fried. I guess you could gently boil it instead, you'd just need a good/fine strainer

    Just swining by a half year later to say the chicken + [fatty medium] + [herb and spice blend] has saved my weeknights. It's such a great modular. As someone who eats greek yogurt daily. I've dabbled with curry paste, old bay, gochujang, garam masala, and an adovada spice mix, all of which have made chicken thighs divine, and can even save an overcooked chicken breast.
    Tl;dr: this is so far the most impactful video on my day-to-day cooking

    Nice one!
    Take this curry paste marinated chicken thighs, preferably with yogurt.
    Add a tbsp each corn and rice flour each per lb for a pancake batter consistency after marination.
    Deep fry.
    Deep fry scallions - quick dip
    Take some of that oil and fry more curry paste in small pan at buffalo sauce consistency.
    Toss all of it together and enjoy.

    Awesome advice and the shrimp toast thing blew my mind. I’m sure I ate something like that and just never considered what the hell it actually was. There’s a Thai cooking lady on TH-cam who tested out loads of common curry pastes people can buy in the west and the one in the thumbnail was underwhelming. The one you made from scratch looks next level, but there are other store brands that are good in a pinch 👌

    Totally. I haven't made my own curry paste yet, but I like Mae Ploy yellow curry paste so much that I always sneak a bite when I use it. It comes in a fairly large tub with the curry in a plastic bag inside (so you have to cut the corner and squeeze it out).

      Y E S, I got some berbere spice from an Ethiopian shop and mixed it into butter to make this stupid delicious compound butter. I was instructed to save it for a VERY special occasion roast chicken, the kind that will make a guy wanna put a ring on it after he tastes it.

    Shaq. Great video. I've had homemade curry paste, but I've never actually made it my self. I'll give it a go.
    Another AMAZING use is Mac & cheese. I added red curry paste to my cheese sauce a few years ago for Thanksgiving and it was an absolute success.
    It added a nice spicy kick and gave the Mac some depth. Highly recommend for this Thanksgiving!

    I actually love mixing a bit of mayo, natural peanut butter, curry paste, and lime.
    I'll add chickpeas, peas, thinly slices cabbage, onion, carrot, and cilantro. Makes an amazing salad for lunch.
    You could use egg m equal parts of each, or mix it up and mess about.

    Make a beurre blanc and wisk in some thai curry paste at the end
    Have the sauce with a nice piece of fish (e.g. salmon or trout), some greens and new potatoes.

    I don't have a food processor and only a tiny mortar and pestle, so sadly I would only be able to make a tiny amount of curry paste at a time while the process is tiring and hard on my wrists (artritis). Otherwise I'd be cranking out fresh pastes non-stop!

    In my experience, that lime zest is subtitutable with just any lime zest. Its lime leaf, and curry leaf used in other Thai dish thats hard to sub.
    Also, shrimp paste and fish sauce is not 1:1 sub, shrimp paste had much deeper taste and stronger funk. As for galangal, imho you can even omit it entirely and most won't notice.
    Coriander roots - garlic - white pepper is the must have base for Thai cuisine imho.
    Thats just a thought.

    Recently didn't have paprika for my beef stew, so I substituted a tablespoon of curry paste and will never look back.

    Doubtful this will get seen, but worth a try. Could you make curry paste without lemon grass?
    I have a severe lemon grass allergy (epi-pen levels. Even if it's being cooked with I have a severe reaction). Is there a substitute for lemon grass or is it optional? In my house we love the flavor of curry, but I've turned into a mild buzzkill because of my allergy.
