    Re: lack of gloves
    It is perfectly normal to not wear gloves in a lot of food prep, n definitely when handling bread dough. You gotta touch the dough directly, gloves would just mess it up.
    Also please know that any food service professional should know n practice proper hygiene such as frequent hand washing. Proper hygiene is always one of the biggest factors for food safety. It doesn’t matter if someone wears gloves, if their hands are contaminated, then guess what the gloves would then become contaminated when they put them on. Gloves have a use for sure, but so many ppl think no gloves=not clean which just not true

      People and their ridiculous complaints. I could not imagine wearing gloves as a baker; sounds like a pain in the ass that would slow me down. But these are the same people who eat in chain restaurants. If they only knew...no gloves would be the least of their worries.

    Bread in the shape of a bagel. Needs to be boiled to develop the “crunch” on the outside and the chewy inside.

      Yeah I did a double take when they went right in the oven without boiling lol. But he mentioned that they get blasted with steam in the oven which kind of gives a similar result.

    i work as a baker, and he explains the process perfectly for a baker.
    the thing is that the bagels they make is more the process of normal rolls here in Norway.
    i think bagel is bagel and they make that with the boil

    It may not be a traditional technique, but Orwasher's is a famous bakery with a stellar reputation and have been making excellent Jewish breads (among other kinds of breads) for over a century. I'm sure their bagel doesn't suck. For everyone saying you can't make a bagel without boiling, don't knock it until you've tried it. If you haven't tasted the bagels in the video, your opinion on their quality is probably worthless. It sure looks like it tastes like a real bagel judging by the close-ups, and I know because I grew up eating traditional bagels in Brooklyn. I've also had excellent bread from Orwasher's bakery (white breads, ryes, no bagels yet). This bagel shouldn't be disqualified until tasted. If Orwasher's says it's a good way to make a bagel, I believe them. They're not known for compromising quality by cutting corners.

    Having just had a toasted bagel with scrambled eggs and chives from the garden,I'm thinking seen them made at Brick lane but only briefly.

    These are breads, not bagels. Boiling in soda water is what defines a bagel from bread. It’s a cheap way to go.

      @@JamieTheMime lye is for pretzels and you're not supposed to boil lye water because it gives off toxic fumes. Home bakers can boil in baking soda water but it's better to boil in honey water or malt syrup water. I've been a bagel baker for 5 years and have tried all the ways.

      boiling in LYE is better flavor than soda water. lye is dangerous and splashes in the eye can lose eye sight. but it tastes better with higher pH

      @@AC-kf2ky lye makes the best tasting bagels imo. it's the best at creating best Maillard reaction. pH just much higher any way you cut it. not saying other methods aren't good, but not as good as professional made bagel using lye.

      Montreal style bagels? They originated in Poland, lol. Bagels without boiling are not bagels. Polish Jews made them similar to the older version of Polish Obwarzanek which is cooked first as well.

    Don't care what you claim, bud. My dad made bagels. Boiling is the only way. Steamed does not give the same results. Either you're lying to save face, or you don't actually know what a proper bagel texture should be.

      @@inevitablerush6600 Yup, and with good reason. Never have I ever had a "shop" bagel as good as what my father made at home. He could put more time and care into a recipe than any commercial operation ever could.

      You can see in the last few frames of this video how the cross section of the bagel, where it's been bitten, looks overly dense and half cooked. And frankly, if bagels aren't wood fire baked, they just aren't as good.

      Was thinking the same. When that came out of the oven I was like "oh honey no that ain't a bagel bye". Mtl has the best bagels period 🙌
