I live in Puerto Rico the coconut you opened was actually a sprouted coconut ... the coconut water transforms into a cloud like texture and you can eat it !! Next time give it a try its delicious in Puerto Rico we call them "Manzana del coco" which in English means the "apple of the coconut".
