One is radish, that red leaf we call as laal saag, and others are available too easily but we cook them and have it and not raw like that and our bengali diet consists of so many veggies and saag, not sure if it will be available at ur place or not.
Red radish is available in north India. Read leaf is Lal math in Marathi or Amarnath or Lala chaurai in Hindi available in India you can get tomato paste we say tomato puri

Amaranth comes in red "laal saag" and green. But some are possibly herbs like rosemary.
