Curious what would price be for each. This is absolutely gourmet. Here in USA average regular burgers not fast food would be 10-15$usd. Those burgers here would be at least 20$ depending where in the country located.

The burger bun deception of branding when he actually pulled those buns out of a bag... first thing I didn't care for. The branding gives a perception that those buns are made "in-house", but in actuality all they do is baste and brand...tricky. Of course that isn't a "deal breaker" for me...those pork burgers were perfectly made. I love how he sous vide the chops for a perfect cook...this way once he deep fried the coating there was no possible way of having an undercooked/raw piece of pork. Ingenious and perfectly done. His cheese sauce from a simple béchamel was done great. (I may have used a different cheese, but no complaints). I can tell the years of skill and I was delighted to see such skill on full display. Grazie infinite e buona mangiata!!!!👊🏼😋
Never seen anybody grind the fat separately and then reincorporate it into the lean ground beef like that. Hmmm...seems like it would be better not to separate the fat out like that. It should at least be put through a second grind. The paper-thin smashburgers are burned beef beyond all flavor and the slightly thicker ones behind them aren't far behind. It doesn't really matter, because adding cheese, lettuce, tomatoes, pickles, onions, bacon, and thousand island dressing completely masks the flavor of the beef anyway. This is how NOT to make a beef burger.
