They do add flavor too - it's just subtle; peppery, menthol(ish), slight pine, and a bitter note. Try this: make a pot of hot water and drop a bay leaf in it and let it steep like tea. Now taste your water - that's the flavor that bay leaves add to a dish. The pepper and bitter notes helps cut through something like a rich meat sauce, the slight herbal flavors accent the meat. It's a win-win.
Are you supposed to take bay leaves out? This is something I've never understood. No-one understands what you're supposed to do with them. You're at least not supposed to eat them, right?
@@heathercameron1485 take them out. They've got a super pungent flavor and don't soften with cooking. They're edible, but tend to be sharp, leathery, and hard/uncomfortable to eat. It's best to just extract flavor from them and then toss them.

Top tip about the rosemary, I have relied heavily on dried mixed herbs previously but tried just fresh rosemary the other day in our slow cooked beef ragu and an absolute winner! Will definitely be using it more! Cheers for the tips, content and books, really enjoying.

Pro tip. When doing the "cook and wait 2ish hours" you can always put it in the oven if your plan is oven safe for the same time at a low heat (250 f, 120 c) and it helps keep your bottom from burning
