- What makes Goto Batangas different from your usual rice porridge? The highlight of this comforting bowl of soup is the slow-cooked beef innards like tripe, liver, and tendon that takes hours to tenderize using traditional methods. While our usual goto in Manila uses glutinous rice as one of its main ingredients, the classic Batangas goto is more of a soup that is packed with offal and is best served with steamy rice on the side.

Padre Garcia is where I attended my first wedding at 8years old. Yummy beef and goat cuisine. If you go to weddings and basically almost daily, most men will be the one cooking. Batangas has one of the tastiest food. I suggest you also feature a traditional wedding. From the mamaysanan, pulungan, dulot stage and the other prenuptial rituals till the bride and groom goes home. These stages all involve food. You will be surprised with the dulot. I shall not pre-empt. I attended 2 years ago a formally presented wedding. The host was really great and explained all the wedding activities which the dayos (mostly Mañilenos like me) did not furrow brows but instead listened with interest.

You can never go wrong with Gotong Batangas. I remember when I was a kid, even before moving here, we always visited my grandparents' home. One of the dished that they will serve is the Gotong Batangas from the local gotohan in our small town. I have always loved the soup. It taste nothing like the other soups that I have tried before. Growing up, I started loving the innards and other meatybstuff in there too. You can eat it as it is, or pair it with a steamy cup of rice, or dip some buns. It will always taste awesome. It's right up there as the perfect comfort food along with the Batangas lomi.
