What am I doing wrong with my sourdough?

Let’s change up some content and throw in something I’ve been loving doing for so long. Making sourdough!
It’s been quite the experience. I started with Gluten Free and I thought that was going to be extremely difficult. It was rather easy compared to gluten sourdough. My goal is to master this crumb and get a good ear with nice char. ONE DAY BB.
If y’all see what I did wrong, feel free to let me know! Would love some help on getting to the best loaf ever!
