This will be a perfect dish for my home made wood fired oven. You inspired me so much with your wonderful dishes, which made me realize that I wanted to make more things than just pizza. So I added another layer of insolation, and now I can make things like these, and other things that require a slower cook and not as intense heat. Thanks again for keeping this channel great!
I don’t have a wood fired oven, so I set the fan oven at 200°c, and fair play, this was bloody fantastic, intense and rich, served it with purple sprouting broccoli and Jersey Royals, I’ll be doing that again.

Love your work so much I had to have a go and cook it in my oven. I bought P85 from Melbourne Fire Brick Company during covid and have had many pizzas but this has been my best cook so far thank you.
Clive, great recipe and preparation. Suggestion: Have you tried dry brining the chicken? Season the thighs with salt, both sides. Place on a rack, in a baking pan to fit the rack, and leave overnight in the refrigerator (24 hrs is best). The skin will dry out much more than patting dry. When ready to cook, do not reaseason with salt, just add the pepper. The skin will turn out very crispy.
