  • Miso Glazed Eggplant (Aubergine) | Bondi Harvest - Guy's miso glazed eggplant is proof that vegan cooking can be just a delicious if not more than any meat fest.
    This recipes a Japanese mosh pit of Soft, Sweet, Sticky, Umami goodness. Miso Glazed Eggplant will rock your world and once you've made it at home your life will never be the same again.

    1 eggplant halved
    2 tablespoons miso paste
    2 tablespoons mirin
    1 tablespoon saki
    1 tablespoon sesame seeds
    1 bunch shallots
    1 orange segments
    1 cup soba noodles cooked
    1 bunch coriander leaf
    1 bunch mint leaf
    1 bunch radish sliced
    1. Slice eggplant in half and using a knife, score the inside in small squares.
    2. In a pan over high heat, add oil and put the eggplant skin facing down.
    3. Cook for a few minutes until skin is brown. Turn the eggplant over and cover with a lid. Cook until eggplant is cooked through (about 3 to 4 minutes).
    4. Meanwhile, in a bowl, mix miso, mirin, sugar and sake.
    5. Cover a cooking tray with foil and place the eggplant on top. Brush miso dengaku mix on top of each eggplant until all the surface is coated.
    6. Put in the oven and broil for 4 minutes. The miso mix should be bubbling when you take it out of the oven.

    I only started using eggplants this year. I have used them in Dahls and I love em! I will be trying this out, it is a knock out awesome dish. :D

    I finally made this today. I think I need some practice the flavors were not balanced. I will say this when you take it out of the oven it is gooey and yummy. Will definitely try to perfect this one, thank you for the recipe.

    Not really a fan of the soft texture of eggplant when cooked, but it doesnt hurt to give this a go. That miso glaze looks flavourful.

    I love miso eggplant ad mixing it with soba is a great idea ... but I wonder why you don't add soy sauce to the glaze ?

    I just want to point it out that not all dried soba noodles that are sold in supermarkets are 100% made with buckwheat flour, sometimes it's mixed with wheat flour so if you're gluten intolerant and want to buy soba, please check the ingredients list before buying it :)

      Love the recipe. I agree. Most buckwheat noodles I see in stores are mixed with wheat flour. Buckwheat on it's own must be too expensive

      In the U.S., it's actually hard to find gluten-free soba noodles. I buy them online or get them at Whole Foods. Even our Asian supermarket doesn't sell GF ones. Weird.

    How to buy eggplant? I do not like eggplant with so much seeds.

      simply buy the younger medium sized plant if its a larger one i normally salt them for 20 mins or so and thenrinse them dry them and go ahead ..the larger ones can be bitter if you don't salt them first and then i Babaganoush themnromally only recently have i discovered this miso glaze way

      it takes about 20 minutes in the oven, you can always try nut butters

    Hey buddy! Awesome recipe. If I choose to leave out the sake, what alternative liquid would you recommend to get the same consistency to the miso glaze you have here? I tried adding a little more mirin, but it was overpowering..

    why do you have maple syrup in the ingredients? I dont see a use for it!

      some people use this in the glaze he didn't ..other recipes i have seen do this ...he doesn't like the sugar as there is some sweetness from the mirin

      Any pan is fine, as long as it has a metal handle (if you dont have one put the eggplant in an oven dish
