This is a super simple method to make your own cream cheese at home from only one ingredient! Have you read the labels on store bought cream cheese? I'll add some to my stories and this highlight reel so you can, but even the organic brands have suspect ingredients. Making your own is super simple.
I also love making my own sour cream (also super simple and once you go homemade you'll never go back), then making cream cheese from that!
It is perfect on bagels, with smoked salmon, in cheesecakes, or any recipe with cream cheese.
This is my simple process:
-Line a colander or strainer with cheesecloth. I recommend folding it in half to double it up.
-Place the colander over the medium bowl. If it sits too low in the bowl you can use some other tools or spatulas to bring it higher up.
-Dump the sour cream into the cheesecloth. Let it drain for several hours.
-After a few hours, check the consistency, if you want it thicker continue to let it drain or you can help drain more whey from the sour cream by giving it a gentle squeeze.
-Once your cream cheese has reached the desired consistency, place it in a container with a tight-fitting lid and refrigerate.
