How to make Authentic Puerto Rican Surullitos(corn fritters)

  • Welcome back to Sweets and Beyond! Today we made for you surullitos(fried corn fritters). These are very popular at parties as an appetizer.
    Here are the ingredients:
    1 1/2 cup of Pre-cooked cornmeal
    4 tbs white sugar
    1 tsp salt
    1 tblsp butter
    2 cups water
    For the mayo-ketchup
    Mayonnaise and ketchup
    Garlic powder

    I love that she is real and she teaches a Scandinavian woman how to cook her Puerto Rican husband his cultural food. I can basically cook anything but it is tricky to try some of these fantastic exotic dishes and although I am a chef I can follow her and attempt these dishes with some success and with a smile on my husbands face which is the point.

    When I was a kid the Spanish woman next door would make these kind of snacks for me and my friends all the time when we used to help mow, rake and shovel snow in her yard. She was such a Old Sweet Woman! I missed her Surullitos when she passed away.. (😥 I miss her) I made this recipe and it took me back to those days.. Thank you!! 😊❤️

    I just came back from my first trip to Puerto Rico and these were my favorite food I discovered there. I'm glad they look fairly simple to make, I'll definitely be trying this!

    @brunilka Rosario - because they don't have cheese in them doesn't mean they are not real surillitos. my mom made these for us all the time and never put cheese in them. Quite frankly the cheese part sounds awful. @Sweetsandbeyond- thanks for posting this j never knew they have precooked cornmeal. 👍

    This is such a good recipe. I need to try this asap like tomorrow lol. What I love is that it has no eggs or anything like that so you can freeze them after you roll them our and store them in your freezer. Then whenever you want it, let it defrost a bit, fry then up and they'll still be the same amount of delicious and this will also help them to not break ! You know that wherever your from, your favorite food, your fever comfort food will be from where you grow up or your nationality and being a Puerto rican, I can say anything Puerto rican is my comfort food lmaoo

    Instead of water I use coconut milk and they also taste great, but now I know I can use water in case I don't have the coconut milk, thanks for sharing

    For those who's stove is Low, Medium & High, your equivalent of having it at 7 is Medium and having it at 4 is Low. :)
    I did the math. ;)

      Yeah, but every stove is different. My old stove, I'd simmer on mark #2 but on this one, I use mark #3.

    Accidentally bought white cornmeal .. but it tasted the same ! Delicious!! added a small rectangle of American cheese in the middle ( how ii used to eat it growing up) . Yum

    Jeez, roxana so quick to get snappy! Not all puerto Ricans cook the same. And sweets and beyond seems to cook the Puerto Rican food traditionally. Which seems really easy and reminds me of how my family cooks puerto Rican food. You can also tell sweet and beyond is Puerto Rican! I've never learned how to cook PR food from my family and now that I'm starting my family I want my kids to know our culture and have our food! My babies are half. Thank you so much for these videos! I can't wait to start making some of these recipes! Everything I didn't learn when I was younger I'm learning now!

      there was this one lady i knew when i was growing up she was showing me how to make these peurto rican dishes she even demonstrated how to make a place for the filling like even for a relleno de papas then she moved back to the island and we lost contact i miss her a lot

    I didn't have any pre-cooked cornmeal so I used plain yellow cornmeal doubling the water and adding it 1-2 tablespoon at a time. These are good! Nice and crunchy on the outside and soft and creamy on the inside. I halved the recipe and had enough for 3-4 people. Thanks!

    Thank God for this video. I'm already 18 and my mom still hasn't taught me how to make our food. :) she used to drive me to a mami y papi truck and they had surrullos but theirs were pillowy and tender on the inside and crunchy on the outside. They were sweeter and had this stretchy white cheese inside, I'm not sure if it was mozzarella or what. If people do make sweet versions of surullos with cheese inside what type of cheese do they use? Or if you have made it with cheese inside what do you use?

    I never had this but I am going to try it.
    corn fitter has corn stuff inside. these are more like hush puppy, but they are rounded balls.

    thanks for this, i always use regular corn meal and once it cools i end up with hard pieces that never fry evenly. im gonna try the precooked.

    Wow, I have not seen these for a while my father used to make me these when I was a little girl he just made them a little thicker and added cheddar cheese to the center. I gotta make these for my kids. thanks a bunch.

      My boyfriend said the same thing about his dad on how he used to make them big. This was my first try and they turned to mush. Hopefully, she can tell me what I did wrong lol

    o can tell you that neither our grocery stores or Asian market has the "precooked corn meal" label. I have gone ahead and bought a packet of that corn muffin mix that they have in walmart like jiffy, etc... I am assuming that is the closest thing to instant corn meal. please give me your suggestion ot share where to buy this brand and type of corn meal. ty

      +Sillyconebaby Dana I wouldn't use the corn bread mix, it has baking powder and it won't be good. They will puff too much. Check out my other video on surullitos con queso where I use regular cornmeal. You just have to cook it a bit longer.

    Just a lil bit of fresh garlic is sooo much better in that Mayo-ketchup mix. Traditionally boricuas use Goya brand (or Amapola) - not sure if any of these brands are pre-cooked 🤔, I’ll have to try this one soon.

    I'm Puerto Rican and I've never seen anything like this. My mother used to make something she called Surullitos but they weren't fried. They were boiled and they usually were stuffed with meat.

    I made them today and while I expected them to be good - I didn't expect them to be THAT awesome. Best snack I ever had. I didn't have mayo + ketchup so I used Salsa to dip. Wow, just wow :D Liked + subscribed. Greetings from Europe!

    My Grandmother used to make this for me when I was younger. But they were a bit bigger because she would put cheese in them. So they had an egg shape to them. Thank you for this video. Now I could finally try to make them myself. Thank you!❤👍

    I love your you tube page!! Everything is so to the point and true to the puerto rican point! Lol ... I was wondering if you are familiar with a fried appetizer my fathers side of the family used to call it arrucha ( not sure of spelling) and was the same concept as bacalaito except smaller with little surprise pieces of banana! It was sooo good pefect snack or appetizer!

      SHAMZPACHINO 21-11 I’m older than that and I’ve never tasted them. I’m Puerto Rican but this is one thing I’ve never tasted. I don’t like fried foods. I wonder how else they can be prepared?

    Can spread be used instead of butter? And if so would it be the same amount as the butter?

    @datal10 After you boil the water and add the uncooked corn meal, you have to cook it on medium heat for a few minutes. Not like this recipe that I just boil the water to melt the butter.

    @doowopshopgal Make sure you have the correct measurements. Check the description for the measurments. It's only 1 teaspoon of salt in 2 cups of water.

    I make them without sugar, just salt and raw corn meal flour. Yes I am Puerto Rican ole school, lol

    What is the temp to fry them? mine just broke all up maybe it was not as hot, but I don't know at what temp I should cook it

    I like how you explain while you're cooking. also its pretty close to how my grandmother and mother cooked. I don't use adobo only because its so high in salt. I have heart problems and high blood pressure so I don't cook with salt at all.

    Abuela would make these and cut up a mozzarella stick in 4 lengthwise and just put it in the center. It was so good.

    One time I did it with a bid of cinnamon and vanilla and they came good. I did it for a Christmas party and everybody love it!
