quality video mate. Helped me out a lot last week! I switched the chip to the new fob like yourself and the car started no problem BUT doors wouldn't lock / unlock. So I had to swap the motherboard as-well and it worked first time. I didn't think the motherboard needed swapped too, thought all the info was stored on the chip.
Hopefully this gets answered if I take the key out the fob for my 2010 plate passat and put it in the door it won't unluck it 99% of the time but will always lock it. But if I put the fob in the ignition and put the key in the it always unlock and lock it. Any help would be much appreciated.

Instead of removing the immobilizer chip, you could've used the same section.
