It’s because at the time the footage was recorded, only two stations had platform gates. Now that platform gates have been installed at every station, the conductor no longer needs to stick his hand out the window for the manual operation of the platform gates, but just stick his head out before closing the train doors to cue the gates to open/close with the sound coming from the door chimes (I bet those gates have some kind of audio sensor like the ones in Tokyo).
This was done in order to reduce delays (with 2 stations that have gates, there is no need to automate them as they are busy stations but now that the gates are in all stations, they decided to fully automate them because the train has to depart the station on time (The Midosuji line arrives/departs every 3 minutes).
The only thing I can’t wait to see is the Elizabeth Line (Crossrail) to start operation from next year and the announcements at some stations in Central London to have different announcements including one announcement-“Attention please, the doors are now closing. This train is now to leave”.

Because the doors closed so dangerously fast to prevent people from rushing onto the train and it was also really noisy because the sound of the doorframes were scraping the sliders before they bang each other LOUDLY. They were reconfigured in recent years to move at a gentler pace like the smaller platform gates and be less noisy than the old factory-like sounds of the old mechanism.
The door chime also changed because after the new door chime was introduced it started to confuse a lot of people because it was too similar. So they changed the sound to the sound that’s heard on the Ginza, Hibiya, Tozai, and Hanzomon lines.

It’s because at the time the footage was recorded, only two stations had platform gates.
