Hi , thank you so much for the "hole in the middle" technique, I tried it today and it worked perfectly. I've been making cutlets for 20+ years and always struggled with not having all parts equally cooked/crispy. Your technique is a life saver.
I only follow your Persian cooking recipes. I find them easy to understand and it’s less complicated and you are very much to the point. Just yesterday made your ghormeh sabzi. Thank you for the videos and wonderful recipes!!
Thank Yusuf uncle, we love you and learning from you! You are a great cook 👨🍳 thank you so much , we want to visit you in california ! We are fan of you ! I learned how to make shole Zard from your videos
YousefJon Thank you very much for teaching us how to cook another Persian dish. I passed on the information on how to cook Kotlet to my daughters and of course they love it
Thank you very much for this video. We love kotlet and I like the fact that video is with ingredients and very thorough. Not to mention it's in English!
THIS did it! First was kabob koobideh, now this. Two of my childhood favorites! Had to sub after watching this one. Keep making these videos and soon I will be able to make all the dishes I remember from my childhood. THANK YOU!
Just found your channel. My ex husband is Iranian. I learned to cook Iranian food in the 1980’s before I knew how to cook American food. So I think I’m a pretty good cook. You are an excellent teacher and I know I will definitely improve my cooking skills by watching your videos. I can just smell your lovely dishes. God bless and stay safe.
Salam brother, thank you for the recipe, but you didn’t tell us how long we cook on each side ?😂 it’s okay tho my dad is Persian so I gave him a call and asked.
I definitely add salt, but maybe i cut it in the video? There are two main ways to make this, and in one you boil the potato first. Maybe I'll make that version of the dish as well. The texture of the potato when cooked this way is sort of like hashbrown
My family has all died and now there’s nobody to make me cutlet and Persian food. Eating American food I quickly got diabetes and gained a lot of weight. Just as well, I will die and be with my family. There is nothing in the world I want more than to have my Baba Here with me again making cutlets and kebabs and gourmet Sabzi every night. When I watch this video I am envious. this is the most golden thing you can have, not money not cars nuts jewelry but to have family that gets together every night and makes delicious Persian food. Life is not the same without them I want to just die.
Salam,
What a humble chef!
So many positive vibes.
I love your videos.

Great video as usual. You are my favorite Persian food teacher. Can these be made in the oven to make them healthier?
Thanks. I believe they will turn out very dry in the oven, but honestly, never heard of anyone trying it :)

This is the right way using raw grated potatoes not cooked and mashed potatoes. Thank You, Mr. Yousef.
Thanks for commenting. That was my question!
With the raw potato I don’t think I would like the texture and I didn’t see you add salt?
I definitely add salt, but maybe i cut it in the video? There are two main ways to make this, and in one you boil the potato first. Maybe I'll make that version of the dish as well. The texture of the potato when cooked this way is sort of like hashbrown

You can taste the Soleimani better if you add some Rose water to it
