  • Ingredients
    - 3x dried ancho chillies, seeds removed and diced
    - 500ml beef stock
    - 2 tbsp beef tallow
    - 700g 80/20 beef mince
    - 1 red onion, finely diced
    - 6 cloves garlic, finely diced
    - 1 tbsp ground cumin
    - 1 tbsp smoked paprika
    - 1 tbsp ground coriander seed
    - 1 tsp cinnamon
    - 1 tsp cayenne pepper
    - 2 tbsp tomato paste
    - 2 tbsp chipotle in adobo
    - 1 can diced tomatoes
    - 1 tbsp maple syrup
    - 400g cooked black eyed beans
    - salt to taste
    - sour cream and spring onion to serve
    Method
    1. Toast the dried ancho chillies in a pan for 2-3 minutes before adding them to a blender with the beef stock and blending until smooth.
    2. In a large pan, heat the beef tallow over medium heat.
    3. Add the beef mince then season with salt and cook until browned. Then remove and set aside.
    4. Add the onion and garlic and cook until softened (add some more tallow if you need to).
    5. Add the cumin, smoked paprika, ground coriander seed, cinnamon, cayenne pepper, tomato paste and chipotle in adobo. Cook for 2-3 minutes.
    6. Add the diced tomatoes, beef, ancho chillies in beef stock, maple syrup and a pinch of salt.
    7. Bring to a simmer. Turn to low and cook for 45 minutes with a lid, stirring often.
    8. Add the cooked black eyed beans and cook for another 5 minutes.
    9. Season with salt to taste.
    10. Garnish with sour cream and spring onions.
    11. Enjoy!

Well done! As a Texan, I approve. If that looks like a massive amount of chili powder and cumin, you’re right. That’s how you make chili. And nice touch with the blended dried chilies. Look like Anchos, which is a good choice.
And no shade for adding beans. Some old school folks think beans have no place in chili. I think it’s totally valid to add beans to a chili you’re just eating from a bowl. If I’m putting it on something (hot dog, frito pie, fries, etc.) i prefer no beans.

Beans are a good way to get your protein as well as meat. Combining the two is a smart health choice because the taste level is virtually unaffected.

I don't like spice, but following this recipe and using a generous amount of sour cream to serve, I was surprised by the depth of flavour the dish had for the 45m cook time. I think the use of beef tallow and giving the mince some dark browns when browning really takes it to the level the dish is famous for. Awesome meal, thanks guys 👌.

I used to do it with beef mince, then I experimented with using a slow cooker and Beef Shin and now ill never go back to beef mince, the texture of the slow cooked beef shin and the flavour is so good.

I can't wait until the fall so I can make this with fresh venison. And that's how I was taught to chop onions. Anyway keep doing what you're doing, I get hungry every time I watch.

Fine work chef :) as a Texas resident, don't let the Texans drag you too hard for using beans. It's mostly old-school cranky types who care that much about it.

    • @terryhowie
      @terryhowie ปีที่แล้ว +1

I'm a fellow Texas resident. Competition style chili (no beans) is a different beast. If you make competition style chili, try making chili cheese fries and chili cheese dogs with it, it's AMAZING. I grew up with Midwestern style chili. I prefer without beans, but if others like beans in their, that's ok too.
I'm a vegetarian for health reasons and have figured out how to make it so I can eat it. I make it with beef for everyone else though
