Pelago does say that you can put panniers on it as is but I haven't tried yet myself - perhaps something small like an ortlieb sport roller with the hooks adjusted somewhat narrow would likely be the best choice. They also make an aftermarket "lowrider" adapter for panniers to get the weight a little lower and more balanced.
I too have the smallest front rack installed, and use a 5 € Aldi Pannier. While the panniers are nothing fancy, they work just fine. Depends on the model though I guess

Wald 137 with removeable straps on top of a Pelago Commuter? The middle path? The neutral option? lol
