My mother being from Eastern Kentucky, I know what a whopping dollop of bacon grease is! Thank you Big Lew for making Cajun cooking, BBQ, cast iron cooking, etc. accessible to all. The buzzywax looks awesome. Loved the Cajun Classic tour, I live in Oregon so it will be hard to get their cast iron but what about those beautiful spatulas, spoons and strainers from California, any ideas how I could get my hands on those? They will go nicely beside my set of Cajun pit sticks.;-) Keep doing what you are doing, you are a joy to watch.

However, searching for “Island Bamboo Pakka Wood” on Amazon gave great results.

Big Lew you are so cool and you are getting the coolest cast iron collection of us all. I really enjoyed getting to see the store and I will certainly be stopping in there should I get in that area. I keep my bacon 🥓 grease stored the same and my measurements are the same lol! Man I am smelling it right through this screen. Did I do that in this video? If so that’s not how I normally do it. I have plenty of other jambalaya videos where the meats are browned first. Oh, well this jambalaya if remember was still quite good.

Yep, but current paella culture tolerates very little variation from the standard. Certainly, Jambalaya is very different dish from classic paella, not simply a variation.
@@BigLewBBQ Jambalaya is only a paella descendant so there is less fuss. The only fuss I see going on is tomatoes or no tomatoes and that just boils down to region. There is even a pasta version called pastalaya

Those onions with that dark color just means flavor with that sauce / spices you used!!!
Once that browning sauce goes in the onions get very far but aren’t burnt. They are still caramelized not carbonized. Thank you for your kind words.
