In the example piece, you went from light green to dark green and back to light green. Did you crochet over the working yarn of the light green to bring it back later in order to alternate?
No, I added a new bobbin for each color change.
This is exactly what Ive been looking for! I’m doing a checked style blanket that goes between 3 colours, am I better off carrying the yarn through or adding a new bobbin each color change?

How would this technique work if it were a single stitch color change I’ve been practicing it and it doesn’t look good how would you make this color change?
Single stitch color changes don't look as sharp as when multiple stiches are involved. However you start your stitch with color 1 and finish with color 2, the next stitch start with color 2 and finish with color 1.
