    Outstanding research, as always!
I am quite sure I used to see Buddha's Delight on the menu at Joyce Chen's Alewife restaurant in the late 70s and early 80s. However, there is no recipe for it in her 1962 cookbook.

Haha! I ALSO checked Joyce Chen's cookbook while working on the episode! I think the dish just doesn't make a lot of sense without the vegetarian context for non-Chinese patrons. I am still so jealous you went to her restaurant!

this made me so hungry! i feel like I see seafood a lot in this dish but I may be mistaken. i know sometimes seafood is considered vegetarian so that could be why

If you look at Shiu Wong Chan's recipe, he included dried oysters. I still debate sometimes with my vegetarian husband whether he could have oysters haha.
