I have made this cake now three times and man oh man it is very addictive but oh sooogggoood!! I use more almost finely ground oatmeal maybe cup and a half more, and very finely crushed walnuts and pecans at least a full cup & half, then put it in smallest springform pan I have just to make it healthier! Hubby even loves it ! Made it for Palm Sunday 1st time, Easter second time! Then one just for me to eat while he is in Washington D.C. for Military Honor Flight for Veterans! So proud of him too! Did I mention I am a chocoholic! :) Jess
thanks for the suggestion I did the same - ground the oats further and ground walnuts to mix in. I used a loaf pan lined with parchment paper and I skipped the frosting.

I tried it today, I must say I was surprised by the taste, it was better that what I would have expected! The only thing is that the taste in chocolate is quite strong, I was full after a small portion. So I wouldn't recommend to make a big cake! I put some crushed peanuts on top. It's nice for people who don't have an oven, thanks for the recipe :)

So I would say it’s kind of like overnight oats. Which I would say is digestible for most. I just rather not use instant oats.

I did my own searching for recipes and found quite a number but they have to be easy and no hard to find ingredients. Also cost is a factor for me. I have always loved cooking and baking. I have always cooked from scratch and have never bought anything I couldn’t make myself. However, I’m getting older, buying all the ingredients is getting more expensive, and the time it takes etc has me looking at quicker, easier, short cutting ways of cooking. The jury is out on this one, texture wise, ….I think I’ll do half a cake first and see how I go! If the taste (and texture) are as good as it looks then yea! Thank you.

If you replace the oats with oat fiber and use sugar free dark chocolate plus monkfruit sweetener, the carb content will lower. I would probably add chopped pecans and walnuts to the mix. Very lovely cake and easy to make.
NOTE: This calls for INSTANT Oatmeal, just one package of instant oats contains approximately 12 grams of sugar, compared to 1 gram found in the same amount of regular, old-fashioned oats. Instant oatmeal is also lower in protein due to the extra processing. I will be using organic regular oats ground up some and adding my own organic raw sugar to the batter, to taste; it's healthier. Love the recipe otherwise, thanks for posting.
You do what you want, obviously, but that extra processing also results in an entirely different texture than regular oatmeal. Since this cake isn't cooked, I'm guessing that's important in achieving the final moist texture.
I'm interested how your plan worked. My guess is the oats need to be cooked so you could possibly dextronize them in a dry fry pan to cook them and then blend them a bit.
Instant oats are more ground up than 5 minute old fashioned oats. Unless you are buying prepackaged/measured single serve flavored oats no sugar or other ingredients are added to instant oats.

@@functionoflightone I haven't tried the recipe yet but I do cook with coconut milk (from a can) and it's thick like that until you put it in a pot and warm it, and then it thins. I think coconut milk is fine but coconut cream probably wouldn't hurt either.

Not a good idea. You will not enjoy it because there's no egg in there, no sugar and no rising agents jyst simply rolled oats basically the main body of the cake. If you dud it'll turn to gunk and pribably end up turning it to pudding unstead.

For all vegi people out there, l had a go at this with almond milk, vegan chocolate ( takes a little longer to melt, try grating it) and oats. Turned out great!

Yes grinding the oatmeal would work, and I’d add a little stevia blend to it. Dark chocolate isn’t that sweet

For the purposes of this recipe, QUICK oats are appropriate. I think "instant" may be a mistranslation either culturally or linguistically.
I'm lactose intolerant, so using coconut milk works for me. Looks yummy.

For all vegi people out there, l had a go at this with almond milk, vegan chocolate ( takes a little longer to melt, try grating it) and oats. Turned out great!
@Melissa Streeter you are welcome. I do tend to tinker about with recipes a lot, depends what l have in my cupboard!!! I hate these chefs and cooks who present you with a toilet roll length of ingredients which you 1. can't afford and 2.will never use again!!!

@@bevie29 looks like 8”, but it really wouldn’t matter as you’re not baking it. It’s just working as a mold.
