I wonder if there is a way to use this device to fill kegs from your fermentor and and have the flow stop once the keg is full?.....Hmmm

Could see it usefull if you wanted to chain two kegs.

So if it shuts off the co2 when its done. Can i technically hook it up to my fermentation so the co2 from yeast does it and qhen its empty is shuts it off and then my unitank turns into a pressurized fermentation with my spunding valve. I want to ferment under pressure but i want to save co2 and use my fermentation in the start to purge my starsan out of keg

Just use the spunding valve into a keg - same effect. This will only work with liquid

In a short line home brew setup, is the purpose of this valve to know when the 1st keg is empty of sanitizer? Won’t you just know, when the liquid out from the 1st keg runs out of liquid and begins pushing co2 to the 2nd? Once it does that, then just connect your fermenter and transfer the beer O2 free. Or am I misunderstanding the purpose of the shutoff valve?

The purpose of this valve is to automate the process so you dont have to sit there waiting for the keg to fill. If you accidentally leave the keg with CO2 attached you could very easily just empty a whole bottle of CO2.
So you are right in saying that this valve is not technically necessary if you don't mind watching the sanitizer transfer from one keg to another.

Yup. This makes it a bit easier. I haven't checked, but maybe Kegland sells the valves? If so, it'll be easy to buy from a reputable seller which is nice.

Won't oxygen go right back in the keg when you open it to fill it with beer? Then you just have to purge the headspace again like normal, sort of defeating the purpose of this. Or Am I missing something?

The point is to NOT open the keg when transferring. You hook up your fermenter directly to the beer out post and pressure transfer straight from the fermenter to the keg. You just have to release the CO2 from the keg regularly.

In theory if the keg is full of CO2, and you are careful when you open it (assuming you are not doing a closed transfer), you'll minimize oxygen exposure.
