Yes a low flame works best cos you don't want to burnt it too quickly. I cover and cook it and then when I flip it over it doesn't need to be covered again it's ok if you don't. It takes a little patience just keep cooking till you achieve the texture you want
How is different from any street side omelette in north and eastern India??? This is not the Parsi omelette that I ate at my friends house many years ago.
