Hello again from Alberta Canada. Just found this I hope you like it Keto Blueberries jam * ▢ 2 cups / 300g blueberries, frozen or fresh * ▢ 2 tablespoon water * ▢ juice of ½ lemon * ▢ 2 pinches xanthan gum * ▢ optional: 1 teaspoon vanilla extract * Put the blueberries, water and lemon juice (and vanilla, if using) in a non stick pan, cover and bring to a boil. * Remove the lid and cook on a medium heat for ca 15 minutes, stirring regularly. The mixture will reduce by ⅓ and thicken. Smash the berries with a spoon while they cook. * You can blend the mixture if you wish to have a smooth consistency. I like it the way it is, with a few bits and pieces in it. * At the end, take a couple of pinches xanthan gum and sprinkle it evenly into the pot, stirring well afterwards. Xanthan gum is a brilliant thickening agent and is also used in gluten free baking, so it does come in handy. You only need a tiny amount - it's quite remarkable. * Pour the mixture into a clean jar and store in the fridge. This recipe fills a small (200ml) jar. A this mixture makes 200g jam, I calculated 1 portion=14g=1tbsp. Recipe Tip - How sweet your jam is will depend on the natural sweetness of your blueberries. If you find the jam is not sweet enough, feel free to add a teaspoon or two of powdered erythritol or 4-8 drops of stevia glycerite Take care
Yay! I'm so happy you enjoyed the bread Zain. I must say each bread recipe has a very different taste from one another so I think you will enjoy trying a few. :)))
@@CookwithMel1 yes indeed very nice. Lower in carbs high protein and fiber and the dough can be used to make anything I even make sugar free cinnamon rolls out of it
When I was on Keto diet, I made a lot of flaxseed bread. Flaxseed has low or almost zero oxalate, however it has a cyanide compound that only allows human to consume 2 tbsp at most per day. Oxalate affects my thyroid and kidneys. I move over to carnivore. Check your thyroid. Particularly active T3, don’t let your doctor just order TSH level and also check your kidneys for kidney stones. I have my abdomen ultrasound yearly and blood lab works every three months, that is how I know. 😊
I may try this recipe however I do like the half Pullman bread pan and would like to use it with your CK almond bread recipe. Can that recipe be cut in half any would tempature and bake time remain the same?
Oh I love the little one too. It makes 4 slices of bread. Yes you can adjust the recipe down to as little as using one egg (just divide the ingredients by the amount of eggs you wish to use) Temperature would be the same it's the bake time that's the variable. Half the recipe, check at half the bake time. You might need a few extra minutes to brown the top
And the answer is I didn't try to toast it sorry. When I make it again I will test it out. If you try it before I do sometimes in the oven is best with these flourless breads
Hi Carla, you're welcome, thanks so much. I think you need to multiply the ingredients by 4 to get a full loaf size. Given that a full loaf is usually 16 slices and this is only 4. And yes you can use carton egg whites.
Sounds intriguing! I will make one as soon as I get some flaxseed meal. No baking powder at all? Also can it be made with whole eggs? Cartons of eggwhite are not easily available in UK.There is not a lot you can do with leftover egg yolks. And I don't like waste.

@@normabailey7682 ohhh...yes Black bread is quite different. But Ahava didn't specify...I was just trying to find out which German bread they were thinking of as there are so many 😊😊😊
I'm so sorry Jenny, I don't even have access to a barbecue to check this. But prepare the batter, add to the pan and seal with foil. Fill a pot with water halfway and close the pot with a lid, then place onto the fire and check after 15 minutes. I have done this with a similar bread.
OK so I made this twice and it didn’t turn out the way that you did it but it turned out fluffy, but when I was mixing it with the mixer. It didn’t turn out the way that she did it so I’m not sure what I did wrong. I don’t know how many minutes I have to do it for to mix it but even though I did the two ingredients I think I did it wrong. Are used ground flaxseed from Walmart. I’m not sure which flaxseed I need, but it’s the only one I have. I tried it with the egg yolk in it, and without the egg yolk. There was another recipe you did, which turned out amazing but this one it’s OK I mean I don’t hate it. I just wish it turned out like yours.
I really don't know why this happened with you because I only mixed until combined. Maybe there is a difference in flax but that's the only thing I can think of. I wouldn't make it again if I didn't like it 😊😊😊
@@CookwithMel1 I don’t hate the taste but it looked different then my first one so my second one was a lot better then the first. It tasted good I just need to keep practicing. Practice makes perfect.
Hi Mel, I'm new to your channel and I must say I find your presentation style utterly charming and refreshing! 🙂. I have a question please: I'm new to using Flaxseed flour, and recently tried a flaxseed bread recipe that included flaxseed flour, psyllium husk powder, baking soda, salt and water. While the end result tasted fine, the bread left an unpleasant "slippery" or "slimy" feeling on my tongue. I'm really hoping this isn't from the flaxseed flour and am assuming it was from the psyllium husk powder, but just wanted to verify with you that your bread doesn't leave this same feeling on the tongue before I make it? Thanks so much and I just subscribed and look forward to trying your keto/low-carb recipes to help manage my Type 2 diabetes without medications. Take care! 😉
It's lovely to meet you. Thanks for joining the community. We have a live show every week and a Facebook chat group where people share photos and their review on my recipes. Let me know if you want to join. Okay I have to be honest with you. When you add both psyllium and flaxseed meal it does need to be balanced because if you soak the 2 above ingredients in water they both turn to jelly. It's hard for me to gauge whether you will find this bread slimy. I actually loved it. Tastes like a German or specialty bread to me. I would say give it a try, given that it's so easy to make and doesn't need much ingredients. And yes please let me know what you think of it because then I would need to ask do you need Gluten free, do you prefer brown bread, stuff like that will help me suggest one you might like better. ❤️❤️❤️
Here are my thoughts.: It looks pretty fast to me. But it’s using up lots of flaxseed. Will try and report back. With all the cleanup, I’m wondering if it be just as fast to do a larger bread that will last me all week
Hey Mel! Am I doing something wrong? When I plug the ingredients into carb manager, it says 2 slices is 3 net carbs instead of zero? I’m using Bobs and H-E-B Cage free egg whites. Should I just use regular eggs and separate them myself?
Hello Belle. Well considering that flaxseed is fiber and there is point something something of a carb in an egg...that doesn't sound right to me. I would test out other brands in the app, and insert regular eggs versus the ones you're using.
With organic eggs being so expensive would this work with 3 whole eggs instead of 6 egg whites and since I can get golden flaxseed powder at Costco, would that be even better than making the bread look more like regular bread. ?
Hello Maxwell. I don't think the bread would rise as much with whole eggs but you're welcome to try it. You can use carton egg whites though, I hear the price of eggs is best at Aldi. It would definitely look better with golden flaxseed meal 😊😊😊
Hello Mark, thanks. You will be surprised at the taste and texture too. I haven't tried it in a breadmaker but honestly it's much easier to make it without it... I'm thinking of the clean up 😊
Hi Mel, can you just clarify the Total Carbs in this recipe please? I thought Total carbs were with the fibre added and Net carbs is with the Fibre subtracted. When I looked at the recipe nutritional information it didn’t seem to add up right, or maybe I am just understanding it wrong. I am so excited to try this recipe but I want to make sure I have the total carbs right. Thank you for everything you do ❤
You're most welcome Lainey 😊 The total carbs is 2.5g/Slice. There is more fiber/Slice (6g) than carbs. So 2.5g -6g is zero. Because we can't list a minus figure. Hope that helps. I think you will enjoy making and eating it 😋
Don't be so rude! Everyone has an accent or have you never met someone from a different country? And how fluent are you in another language? Your ignorance is astounding... 🥱

I made this flax seed bread today. As a bread, whilst making it, kept thinking, I'll give it a go. To my surprise it is a full flavour bread. Have to admit that I tweaked the recipe by adding, 1 tlb Oil, 30g Oat flour, 1tsp of B.Powder and 1/2tsp B.Soda. it really is a lovely tasting bread. My only comment is that it sunk in the middle, had no rise at all throughout baking. This is surprising, as baking powder and the bicarbonate of soda would have, should have, given it rise, but even without these two TH-cam videos show rise in just flaxseed and egg whites. Oh, I whisked the egg whites to nearly stiff and then folded in the dry, adding the oil after. Don't know why there was no rise, as leaving the flax seed aside all the other ingredients I use in banana or carrot bread same quantities and always get a super rise in those loaves, so can't think what occurred to prevent the rise.
Hello, I'm so happy you like the taste of the bread. You added alot of extra ingredients and well done for putting your own spin on it. Keeping in mind this bread rises with these two ingredients here are my thoughts. While oil moistens the bread it is a 'heavy' ingredient, and you really don't need the oat fiber in this recipe. Oat fiber is amazing in that it acts as a flour in keto baking and it's very absorbent (it could have dried out the egg whites completely). I would use the flaxseed, the egg whites, baking powder, and perhaps grated carrot.
@privateprivate9285 My dear..you COMPLETELY changed her recipe so there is no way she can answer you on what went wrong! Tip: Next time, FOLLOW INSTRUCTIONS and give original recipes a try before you play "mad scientist" and wonder why the results didn't turn out right.

Don't have a half pan can I double the recipe for a bread size tin. Thank you.
Nice!!
Wow! So easy! I'll have to try this...I hope I like flaxseed...
Love ya lots!! 😘 ❤️💙💜 ~Lana
I hope so too Lana...yes it's very easy

To do it in a stove pan, how many minutes is left on the fire? Thank you
I'm so sorry Jenny, I don't even have access to a barbecue to check this.
Is there an alternative to that pan? I’d like to try this! Thank you.
Perhaps you could create a mold with foil? Thanks
@@CookwithMel1 great idea! If I get into it enough I can get the pan. Thank you so much for your response.
@Reneesfun you're welcome. Yes it's good to see if you like it first
Can you use milled flaxseed
I'm sorry. I didn't try that so not sure
What would be the carb count for this 😊🤔
Please check the description box 😊😊
Hi,what pan can one use if one doesn't have that pan?thanks Rachel
Hi Rachel. A small oven safe Casserole dish perhaps? You could also double the ingredients to fit pan you already have :)
Thanks Mel,do I have to cover it?
@@rachelharmse115 yes... foil will do
Hi Mel its me again,so if I want to double the ingredients for a whole bread,do I have to use 12egg whites?just think its a lot.thanks
Looks good
Thanks Corry ❤️
Hi Mel,
I'm new to your channel and I must say I find your presentation style utterly charming and refreshing!
Clara y harina de linaza eso son los ingredientes ? 😘 desde🇦🇷
6 claras de huevo y 100 gramos de semillas de lino molidas :)))
Here are my thoughts.:
It looks pretty fast to me.
But it’s using up lots of flaxseed.
Will try and report back. With all the cleanup, I’m wondering if it be just as fast to do a larger bread that will last me all week
Yes yes please do report back. It sounds like you're inspired to experiment 😉
Love this😘
Thanks Azil ❤️
Was it still wet when you removed it from the oven?
I think a little yes. Then dried as it cooled.
Please add bread & Buns recipes without creamcheese & peanut butter Thanks❤
For example our ciabatta buns. We have plenty of others too. You should be able to find them in the bread playlist 😊
Best thing to date a new bread
I do love the mug bread but not cook in a mug lol baked in a ninja foodi xL pro air fryed
Nice! Thanks so much ❤️
So you made it and loved it?
Can this be done without eggs,
I haven't tried it to be honest 😊
Se vi piace, potete mettere metà farina di lino e metà farina di mandorle. Buonissimo!! 😉
Sembra abbastanza delizioso!!! Grazie per il consiglio :)))
My issue is that it always comes out wet any solution please
I would add a couple more tablespoons of flaxseed meal. Perhaps your brand isn't as strong as mine
How many cups of flax seed
100g or about 3/4 cup
I have tried another recipe like this. The taste is fine but always kinda wet... What was the texture like for you?
I didn't get a wet feeling, more like a dense bread. I want to see what other people think of it too.
Mel could you freeze this bread
Yes! Wrapped nicely and defrost naturally 😊😊😊
This is the most simple recipe I've seen so far. Can this be done in a bread maker instead of oven?
Hello Mark, thanks. You will be surprised at the taste and texture too. I haven't tried it in a breadmaker but honestly it's much easier to make it without it... I'm thinking of the clean up 😊
Have you ever tried using whole eggs rather than just whites?
I actually did. The yolk made it taste a bit eggy 😊
@@CookwithMel1
I see, I guess that would be ok for an egg salad sandwich.
Yeah you can use the yolks in so many ways 😊😊😊
6 eggs for 4 slices of bread? Not very economical since egg prices have risen so much but I like the idea
This video was made before eggs became expensive 😊😊
@@CookwithMel1 yah that’s true 👍😉
Is that a mini loaf?
Yes... there is a link in the description box to the pan i used. You can view the dimensions there if you like 😊
@@CookwithMel1 ya I heard that right after I sent my question lol ty!
@@CookwithMel1 also can I double the recipe for a large bread pan?
Thanks. You sure can...and double the bake time too
Hi Mel, can you just clarify the Total Carbs in this recipe please? I thought Total carbs were with the fibre added and Net carbs is with the Fibre subtracted. When I looked at the recipe nutritional information it didn’t seem to add up right, or maybe I am just understanding it wrong. I am so excited to try this recipe but I want to make sure I have the total carbs right. Thank you for everything you do ❤
You're most welcome Lainey 😊
The total carbs is 2.5g/Slice. There is more fiber/Slice (6g) than carbs. So 2.5g -6g is zero. Because we can't list a minus figure. Hope that helps.
I think you will enjoy making and eating it 😋
What is a "Breed".....?
Maybe bread 🍞
Don't be so rude! Everyone has an accent or have you never met someone from a different country? And how fluent are you in another language? Your ignorance is astounding... 🥱

Hello my friend. I was dying to speak to you. Yes I saw it. We spoke on Instagram. She is new so I let it go but I did say she needs to be careful about it because I have a copyright on all my videos. I think she didn't expect that you would be right in what you said.
I do share other people's recipes too but I do follow the acceptable process and they aren't normally keto channels or recipes.
I love you so much for sticking up for me. Thank you 😊 ❤️❤️❤️

@@melanytodd2929 thanks so much Mel. I have to be diplomatic with this sort of thing so I don't come off bad. Thanks for stepping in on my behalf. I did say to her that I understand she's new to the whole TH-cam thing but also, I have a copyright claim on all my videos, so I could take it further if I was vicious.

Why can't we use the whole egg?

Too many eggs. Tastes like egg whites. Not a fan

Add a tablespoon if vinegar and a 1/4 teaspoon salt. It'll remove a lot of that eggy taste
