The first bale that you made was alfalfa hay (( because you tedded that windrow of wet alfalfa)) and turned it into a dry hay forage by removing the moisture. That's the reason that the bale changed to a lighter color green. The reason that the baler wrapped the second alfalfa bale with plastic wrap, was because it was wet, and it remained a darker green color. A wet forage is fermented in a wrapped bale, sealed bunker or silo and turned to silage for feeding. When you tedd a forage crop in Farm Sim, whether it be grass, alfalfa, clover, ( I don't know about triticale, haven't farmed it in game yet), you change it from what would normally be a wet silage into a dry hay product. Alfalfa and clover crops that are to be baled for dry hay, are generally mowed with a MOCO (mower conditioner) either pull type or self propelled. A moco cuts and conditions the leafy crops between rollers, to crimp the leaves and stems, so they can dry down faster, this saves the extra trip over the field with a tedder. If you're just using it as grass you don't need to do that. So, after mowing, (and using tedder, if you did), next you use a windrower. This makes neat swaths, or 'windrows' so that you can pick up the cut grass with a baler.

Alfalfa can be harvested with a forage head harvester, it doesnt have to be cut.
