請問 這做法 鱸魚 換條 石斑魚 也一樣搭嗎 ?
应该可以的,可能蒸的时间长一些吧
魚肉細嫩刺少的都可以
蒸石班方法:
水滾,碟齐水蒸(預熱),放一雙筷子在碟底(使蒸氣可通過碟底而魚熟得均匀些),下魚,放已浸軟而剪碎的果皮在魚面,洒幾滴生油在魚面。
下蓋,記緊收细到1點火多啲啲,蒸15分鐘,熄火勿揭蓋,再焗多5分鐘。就「石班皮不會破,焗=連骨都熟埋」,生油灒葱花洒落已蒸好的魚面即成。
以上方法只限蒸「石班類的魚」,其他品種另述。
「自煮新人類」凝聚家族方法之一……一味好餸😂😆😘
記著:石班的肉很結實,如果用猛火蒸,皮蒸到爆爛魚心仍未熟,不合格:=out。
黄花,红衫,黄脚立,魚身較稀(不结實),猛火蒸7至11分鐘即成。
馬友也比較结實,仍未夠石班實,猛火10至12分鐘,再焗2至3分鐘便可。

This is certainly not a traditional Cantonese steam fish. Fish used is a fresh water large mouth bass. Steaming a deboned fish for 10 mins was too long …8 minutes the top. Soaking fish in water serves no purpose other than to make the meat less firm. One wants to dry the fish before steaming.
