Mixing also after "mother" occurs makes sense to incorporate the oxygen for the bacteria. My parents usually left the film to "protect" the mixture.
Hi, adding sugar and water ensures the small batch fermentation starts and finishes with enough alcohol for the acetobacter to feed off of to make the vinegar. If your grapes are high in sugar and you fement the grape juice you probably don't need sugar. Cheers
