    I made a batch of these and also one with raspberry ganache and everyone raved about them. I’ve never eaten such beautiful chocolates, the flavour is so fresh and delicious. Thanks for the recipe for ganache .

    The last bonbon may not come out because if you hold the mold there with your finger, then the heat from your finger can interfere with the heat from the mold and the chocolate shell. This way it can't crystalize. :)

    안녕하세요. 카카오버터색소에 대해서 궁금한게 있는데 카카오버터 템퍼링을 온도를 올리고 내리고 다시 올리고 3단계가 아니라
    45도까지 올리고 31도로 내리는 2단계만으로 해도 템퍼링이 되는 것인가요?

    The ganache seems nice but the shell is too thick ! Also let the ganache set before you close it , you’ll need just one time for closing it and try just heating it a tiny bit with a heat gun

    How much chocolate is necessary for one batch of shells? your shells seem thick...maybe you could have add a bit of milk to thin out the chocolate...that way with the same tempering chocolate amount you can make more shells....

    영상 잘봤습니다.~질문 있는데요.
    몰드에 색소 작업 하고 나서 템퍼링 다 끝난 초콜릿 작업 다하고 몰드에서 분리 했을때 색소가 몰드에서 다 떨어지지 않고 초콜릿만 분리되는건 왜 그런가요?
    색소가 떡져 나올떼도 있고 그래요..
    색소는 쉐프...쓰는데 캔디컬러 지용성 색소에요...

      Pulir perfectamente el molde es indispensable; templar el colorante de manteca de cacao, luego de pintar deja secar y cristalizar un día es mejor; el encamisado de chocolate no muy delgado o fino, por último dejar cristalizar naturalmente durante mínimo 6 horas en el ambiente fresco (hasta 20°C) no en nevera porque ingresa humedad y no permite que las coquillas salgan perfectamente y puede quedar pegado al molde la pintura.

      Usually, 5% powder is good. For example for 100g butter use 5g powder.

    .... nice work but... when you add mango pure within the chocolate in the blender..... there is a hair inside 🙈🙈🙈 It made me see the entire procedure different...also the final product!😶

      Thank you for pointing that out! I actually found the hair right after☺️ since it’s home baking, I’m not wearing a chef’s hat or anything like that, so it happens 😌 Also Don’t worry! I had the chocolate all by myself 😝 I love mango 🥭

      I tried to do the same ganache without lemon juice and it was too sweet. i think the lemon juice helps to balance the taste
