But if you wait till the end to put in your garlic, you may forget to put it in. Lamb does need garlic, but garlic tends to burn easily then it turns bitter, so best to lightly cook it, or put it in at the end, or season your oil with the garlic flavor. My dad used to like to cook lamb chops and then put in bread slices after the lamb was done cooking and fry up the bread in the lamb drippings and serve that with the lamb. I think that is a Scottish way to eat your lamb.

Add Dijon mustard and a little more brown sugar. Keep stirring and taste as you go to make sure the alcohol has burned off. Once you're done just pour over your chops
