  • Learn how to make Oven Roasted Tomato Choka in this episode of #MeatFreeMonday with Chris De La Rosa of CaribbeanPot.com Roma Tomatoes are roasted in the oven until charred before garlic, Scotch Bonnet peppers, thinly sliced onions and parsley are added, then topped with heated olive oil for an iconic tomato salsa-like dish.
    For this #vegan #glutenfree dish you'll need...
    8-10 ripe tomatoes
    4 cloves garlic
    1-3 scotch bonnet peppers
    1 tablespoon sea salt (divided)
    1 1/2 tablespoon olive oil
    1 tablespoon finely chopped parsley
1/2 red onion (any onion will work)

I love anything tomato and I have never had this dish. How would you eat this ? Like soup or on top of crusty bread? What is the traditional way to eat this?

Hi Chris, fellow trini here. Good recipe .. wouldn’t use olive oil though as when you heat olive oil too high the molecular structure of the oil changes and degrades and it turns into a very unhealthy oil, with an unpleasant taste. Olive oil is meant to be drizzled or served on top dishes or on the side in a saucer with some salt and freshly cracked black pepper to dip bread in. In Italy they even mix it with Parmesan or pecorino and dip dread into it. I’d stick to the veg oil to temp it. Love the recipes though.. sometimes when I make it I like to ass freshly chopped basil leaves.
